Peach Horchata Pudding Pops
Makes 10 to 12 popsicles
INGREDIENTS:
2 cups rice pudding,
1/2 cup half - and - half,
1/ 4 cup honey,
1 teaspoon ground cinnamon,
1/2 teaspoon kosher salt,
2 peaches, thinly sliced
DIRECTIONS:
Place rice pudding, half - and - half, honey, cinnamon, and salt in a blender and puree until smooth. Place 2 to 3 slices of peach es into each popsicle mold. Fill with pudding mixture and freeze 6-8 hours until firm.

Peaches n Cream overnight oats (serves 1)
Ingredients: 1/2 cup rolled oats, 1/2 cup milk of choice, 1/4 cup full fat plain or vanilla Greek yogurt, 1 tbsp chia seeds, 1 tbsp maple syrup or honey, 1/4 tsp vanilla extract, 1/4 cup minced yellow peaches optional: top with additional peach slices or granola
Directions Place all ingredients into a glass jar and mix until well combined. Cover and refrigerate for at least 2 hours or overnight. Toppings can be added the night before or right before eating. Add more milk to desired consistency if needed. Enjoy!

Balsamic Honey Peach Puff Pastry Tart (serves 4-6)
Ingredients: Puff pastry, yellow peaches, honey, balsamic glaze, egg
Directions: Preheat oven to 375F. Take thawed puff pastry and cut as many rectangles as you need. On a baking sheet with parchment paper, spoon 1 tsp of honey, drizzle with balsamic glaze, arrange 3-4 peach slices, another tsp of honey and cover with puff pastry and crimp edges with a fork to seal. Repeat with remaining puff pastry rectangles. Brush the tops with egg wash and bake for 15 to 20 minutes until golden and bubbly. Let the tarts cool for 5-8 minutes on the pan before flipping over. Enjoy!
