My #1 cherry to bake and cook with: Montmorency tart cherries. These little sour rubies have a sweet-tart and slightly astringent taste raw, but when cooked with some sugar they transcend into the world’s best dessert fruit. Sweetened dried tart cherries are my favorite dried fruit, by far, and taste fantastic in a ton of desserts, like chocolate chip cookies, fruitcakes, and much more. Michigan grows more than 70% of the tart cherries in the US, and the region around Traverse City grows the most. For those outside the midwest, you can find frozen pitted tart cherries at some grocery stores or you can order them online for all of your baking needs

Black cherries (like Bing cherries and other varieties): Dark color, deep dark flesh. Best eaten fresh, OK in cooking, but lack acidity, so you don’t need much additional sugar. If baking with these, I use some tart cherries, lemon juice, or another tart fruit to balance the flavor.
Rainier cherries: Pink-ish/golden color, creamy-colored flesh. subtle, fresh, sweet, almost peachy. Again, best eating fresh, but pair nicely with tangy fruit like apricots or raspberries.
Montmorency tart cherries: Bright red, white flesh, soft texture. A bit tart and astringent, so not for eating fresh. The ultimate cherry for baking and the only real option for cherry pie. When baking with these, they need a decent amount of sugar and they transform into that bright red, cherry-candy like flavor. Heaven.
[Not pictured] Balaton tart cherries: Dark red, deep red flesh, soft texture but a bit firmer than Montmorency. Too tart to eat plain, but not as tart as Montmorency. A bit of a subtle spicy flavor. Good for canning or candying. Great for baking and they’re lovely to mix with Montmorency in a pie.
