This version of tiramisu was very good and fresh and light! I pasteurize the eggs ❤️

Ingridients for 8x8 inch baking pan

3 eggs
25 savoiardi Cookies or ladyfingers
250 g mascarpone cheese
90 g sugar ( if you don’t pasteurize the eggs)
200 ml milk
180 ml Limoncello
Zest of one lemon

To pasteurize the eggs:
1/4 cup sugar
2 tbsp water

Method:
Divide the eggs yolk to the egg white.
Put the eggs yolks in a big bowl and start to mix them slowly. In the meantime make the syrup just putting the water and sugar in a small pot. Bring it to a boil and when you have temperature 120C turn off and add it to the egg yolk.
Mix with hand mixer or a machine for 5/7 minutes.
Do the exact same for the egg white
Add 2 tbsp water and 1/4 cup sugar in a pot and bring to a temperature 120 c. When you have the syrup add it the the egg white and mix for 5/7 minutes.When you have the eggs pasteurize add the madcarpone to the eggs yolk plus 2 tbsp of limoncello and lemon zest.Mix until you have a perfect cream.Slowly add the egg white folding them in the mascarpone cream. Slowly! Now pour the milk and limoncello in a deep dish and start to assamble the tiramisu.Deep the cookies in it for few seconds both side and arrange them in the baking dish. Add half of the cream and dip the rest of the cookies in the limoncello so you can do another layer. Finish off with the cream and refrigerate for at least 3 hours.
