#ad My son and I read the new Simon Kids book Ramen for Everyone and loved it! We couldn't wait to make our own ramen together so thankfully there was an Easy Miso Ramen recipe in the back of the book, which we made in this video. Ramen for Everyone is written by Patricia Tanumihardja and illustrated by Shiho Pate. It is about a boy who loves his dad's ramen, so he wants to make some of his own. It doesn't turn out as planned but he learns that not everything has to be perfect in order to be great for everyone in his family. Of course I loved reading about a father and his child, but making the ramen with my own son was my favorite part! I would highly recommend picking this book up for some fun time reading and fun time in the kitchen together. Ramen for Everyone is available now wherever you buy books.

Ingredients: 1 AdapTable Meals Carne Asada Flank Steak
Directions: Cook according to package directions, removing from oven when internal temperature is 145°.

Crispy Taco Smashed Potatoes
Ingredients: 10-15 small potatoes, 3 Tbsp. olive oil, 1 packet taco seasoning
Directions: Boil potatoes for 20 minutes. Preheat oven to 425°. Combine oil and taco seasoning. Mix potatoes and oil in bowl. Pour onto baking sheet and gently smash to about 1/2 inch thick. Bake in oven for 20 minutes or until crispy on the edges.

Mexican-Style Corn Salad
Ingredients: lettuce, bell pepper, red onion, tomatoes, corn, black beans, cilantro, avocado, lime, dressing
Directions: Chop lettuce, bell pepper, onion, tomatoes, cilantro, and avocado. Combine all ingredients in bowl and squeeze on a wedge of lime. Drizzle on your favorite dressing if desired.

#ad What food instantly makes you think of your childhood? As a child of the ‘80s and ‘90s there were many for me but hot sandwiches stuffed in a pocket shape were always a fun meal choice! I thought it would be fun to take the childhood nostalgia and up the taste by making these at home with better ingredients. So I created my Cheesy @minutericeus Jalapeño Rice and Chicken Pockets.

Directions:
This recipe starts with my favorite flavor rice of the moment, Minute Rice Jalapeño Rice Cups. Heat one cup up in the microwave for 60 seconds. Then mix rice with 4 oz. cream cheese and 1/2 cup shredded cheese. Cut premade pizza dough into rectangles, spoon the mixture on top along with chopped cooked chicken and cooked broccoli. Top with another rectangle and pinch to seal the sides closed. Brush with egg wash if you would like. Bake in the oven for 15 minutes at 375° or until golden brown.

Remember to let cool for a few minute because I never had patience as a kid and always burnt the roof of my mouth. Then enjoy one of your favorite childhood treats as a tasty adult meal!
