OGGS® Plant-Based Pancakes

A simple swap from eggs to OGGS® Aquafaba this Pancake Day makes your pancakes plant-based AND better for the planet! You can top these thick and fluffy pancakes with anything you like - we kept things simple this time and went for maple syrup and berries.


125ml OGGS® Aquafaba 
1 tsp baking powder 
65g caster sugar 
190g plain flour 
3 tbsp vegetable oil 
A squeeze of lemon 
75ml plant milk 
Margarine, for frying 
Favourite toppings… fresh fruit, maple syrup, melted chocolate…the list goes on


1. Combine all the dry ingredients together in a large bowl.
2. Next, whisk up your OGGS® Aquafaba in a clean bowl for 30 seconds until it’s pale and frothy and then add the oil, lemon juice and milk.
3. Combine the wet and dry ingredients, little by little, until you’ve made a smooth thick batter.
4. Rest the pancake batter in the fridge for 30 minutes (optional step, but it does make the pancakes better!)
5. Heat a non-stick frying pan over medium heat and add a knob of margarine. Once melted, add a small ladleful of batter into the frying pan and smooth into a rough round with the back of the ladle.
6. Wait until the base of the mixture sets and the top begins to bubble, then flip it over and cook until both sides are golden brown. Repeat until all the batter is used up.
7. Serve up and cover with your favourite toppings!

Melted Snowman Meringues ⛄️

How adorable are these 5 ingredient mini meringues? They’re made using our OGGS Aquafaba so are fully vegan (and totally festive!)

100ml OGGS® Aquafaba
100g caster sugar
1/4 teaspoon cream of tartar


40ml OGGS® Aquafaba
100g icing sugar
Food colouring (we like Wilton colouring gels)


Make sure all the equipment and utensils you’re using are super clean and completely oil free. Even the smallest bit of grease can turn your perfect peaks into a sticky mess.

Preheat oven to 100°c/ gas mark 1.5 and line a baking tray with parchment paper. If you’re making larger nests, you may want to use separate trays.

With an electric whisk, whisk your OGGS® Aquafaba starting on a medium speed and gradually build your speed up (so you don’t risk getting showered in Aquafaba!) Beat for 2 minutes until medium peaks form.

Add the cream of tartar and beat with the mixer on the highest speed until stiff peaks form.

One tablespoon at a time, slowly add the sugar and continue mixing, until all the sugar is gone. Scrape down the sides of the bowl a couple of times to ensure getting all the sugar into the mix. The mixture should be so stiff, it doesn’t shift at all.

Transfer the meringue into a piping bag with a round nozzles and pipe snowmen shapes, one ball onto another onto a baking tray.

Bake for 2h at 100c.

Make the royal icing by combining icing sugar with Aquafaba, adding the Aquafaba one teaspoon at a time and checking the consistency in between.

The icing should be the consistency of yogurt.

Make 3 colours: black, pink and orange or more if you prefer.

Pour the royal icing into piping bags and draw eyes, carrot nose and smile onto the snowmen.
