Ingredients:
1 bottle of Scrambled OGGS
4 vegan croissants (we used @laboulangerrvegan)
4 strips of vegan bacon chopped up small
A handful of vegan cheese
Chives for garnishing (optional)
Oil for frying
Method:
1. Preheat the grill on a medium heat
2. Fry the bacon pieces in some oil until crispy and set aside
3. Cook the Scrambled OGGS by the bottle instructions and set aside
4. Put the croissants in a lined oven dish and put under the grill for 5 mins
5. Remove from the grill and slice each croissant lengthways from tail to tail but don’t cut right through!
6. Stuff the croissant slices with Scrambled OGGS, bacon pieces and a sprinkle of cheese
7. Put the croissants back under the grill for about 5 mins until the cheese has melted
8. Finely chop some chives and sprinkle over the croissants
9. Eat straight away 🔥

Who doesn’t love Carbonara? Well here’s our plant-based version made using our Scrambled OGGS. It’s quick, easy and delicious 🌱
INGREDIENTS (serves 1)
50ml Scrambled OGGS®
110g Spaghetti
50g Plant-based bacon lardons
2 tsp crushed garlic
2 tsp chopped parsley
Black pepper
Salt
50g Plant-based parmesan alternative 60ml Plant-based cream or milk (we like soya)
Olive oil
METHOD
Cook the spaghetti as per cooking instructions on pack.
Lightly fry off the garlic and plant-based bacon lardons and season with salt and black pepper.
Combine the Scrambled OGGS, grated plant-based parmesan alternative and the plant-based milk alternative in a jug.
Once the spaghetti is cooked al dente, drain the water, return the cooked spaghetti back into the pot and immediately stir in the bacon and garlic before pouring over the Scrambled OGGS® mixture and combine until fully coated.
Once plated up sprinkle with chopped parsley and drizzle over a little olive oil.

A simple swap from eggs to OGGS® Aquafaba this Pancake Day makes your pancakes plant-based AND better for the planet! You can top these thick and fluffy pancakes with anything you like - we kept things simple this time and went for maple syrup and berries.
INGREDIENTS
125ml OGGS® Aquafaba
1 tsp baking powder
65g caster sugar
190g plain flour
3 tbsp vegetable oil
A squeeze of lemon
75ml plant milk
Margarine, for frying
Favourite toppings… fresh fruit, maple syrup, melted chocolate…the list goes on
METHOD
1. Combine all the dry ingredients together in a large bowl.
2. Next, whisk up your OGGS® Aquafaba in a clean bowl for 30 seconds until it’s pale and frothy and then add the oil, lemon juice and milk.
3. Combine the wet and dry ingredients, little by little, until you’ve made a smooth thick batter.
4. Rest the pancake batter in the fridge for 30 minutes (optional step, but it does make the pancakes better!)
5. Heat a non-stick frying pan over medium heat and add a knob of margarine. Once melted, add a small ladleful of batter into the frying pan and smooth into a rough round with the back of the ladle.
6. Wait until the base of the mixture sets and the top begins to bubble, then flip it over and cook until both sides are golden brown. Repeat until all the batter is used up.
7. Serve up and cover with your favourite toppings!

110ml Scrambled OGGS®
100ml sweetened plant milk
2 thick slices of bread
Margarine for frying
1/2 tsp vanilla
1/4 tsp cinnamon
Berries Maple syrup METHOD
1. In a large bowl, add the Scrambled OGGS®, plant-based milk, vanilla extract and ground cinnamon then mix together until combined.
2. Pour the mixture into a flat dish (with edges so that it doesn’t go everywhere!) and place the two slices of bread in the mixture. Flip over so both sides get a good coating.
3. Heat a griddle pan (or a non-stick frying pan) over a medium heat and then add some margarine to the pan until it melts.
4. Fry for 4-5 mins on each side until golden brown.

OGGS Molten Chocolate Pots 🍫
Ingredients:
100ml OGGS® Aquafaba
110g Vegetable oil
290g Sugar
220ml plant milk
70g cacao
260g flour
1 tsp bicarbonate of soda
1 tsp baking powder
1 tbsp vanilla extract
100g dark chocolate
1 pinch Salt
Method:
1. Preheat the oven 180°C Fan (200°C / Gas 6).
2. Mix together the oil, sugar, milk, vanilla and OGGS® Aquafaba.
3. Add the cacao, flour & baking powder.
4. Mix all together.
5. Grease a muffin tray or some oven proof ramekins.
6. Fill the tray with the mix.
7. Bake for 8-10 mins at 180°C Fan (200°C / Gas 6). The outside should be cooked but the middle should still be raw.
8. Let the fondants rest for at least 5 mins and release them with a knife.
9. If you want to serve them hot you can add some chocolate chips into the sunken middle and warm them up for 5 mins before serving.

Method:
1. Whisk OGGS® Aquafaba for about 5 mins until it reaches stiff peaks then add the cream of tartar.
2. Add the sugar gradually and continue whisking until the mixture is thick and glossy.
3. On a bain marie melt the chocolate.
4. Heat the milk then fold in the chocolate.
5. Add 3 big tablespoon of the whipped Aquafaba into the chocolate mix and combine together.
6. Pour this into the rest of the whipped Aquafaba and fold gently.
7. Pour into glasses of your choice and leave to rest in the fridge for at least 2 hours to set.

How adorable are these 5 ingredient mini meringues? They’re made using our OGGS Aquafaba so are fully vegan (and totally festive!)

INGREDIENTS:
FOR THE MERINGUE:
100ml OGGS® Aquafaba
100g caster sugar
1/4 teaspoon cream of tartar
FOR THE ICING:
40ml OGGS® Aquafaba
100g icing sugar
Food colouring (we like Wilton colouring gels)
METHOD:
Make sure all the equipment and utensils you’re using are super clean and completely oil free. Even the smallest bit of grease can turn your perfect peaks into a sticky mess.
Preheat oven to 100°c/ gas mark 1.5 and line a baking tray with parchment paper. If you’re making larger nests, you may want to use separate trays.
With an electric whisk, whisk your OGGS® Aquafaba starting on a medium speed and gradually build your speed up (so you don’t risk getting showered in Aquafaba!) Beat for 2 minutes until medium peaks form.
Add the cream of tartar and beat with the mixer on the highest speed until stiff peaks form.
One tablespoon at a time, slowly add the sugar and continue mixing, until all the sugar is gone. Scrape down the sides of the bowl a couple of times to ensure getting all the sugar into the mix. The mixture should be so stiff, it doesn’t shift at all.
Transfer the meringue into a piping bag with a round nozzles and pipe snowmen shapes, one ball onto another onto a baking tray.
Bake for 2h at 100c.
Make the royal icing by combining icing sugar with Aquafaba, adding the Aquafaba one teaspoon at a time and checking the consistency in between.
The icing should be the consistency of yogurt.
Make 3 colours: black, pink and orange or more if you prefer.
Pour the royal icing into piping bags and draw eyes, carrot nose and smile onto the snowmen.

tsp white vinegar
1/2 tsp bicarbonate of soda

Method:
1. Preheat your oven at 250°C Fan (230°C).
2. Fill your Yorkshire pan or muffin tin with about ½ cm of oil.
3. Put the pan in the oven.
4. In a mixing bowl combine the Scrambled OGGS®, vinegar and milk.
5. Slowly add the flour while mixing then the bicarbonate, salt and pepper.
6. Once your oil is hot pour the mix carefully into the pan.
7. Bake for 15 mins, then enjoy!
