This recipe is found in my book PLANNED….but sharing below!😍

BANANA BREAD BAKED OATS

1 very ripe banana, smashed (120 g)
1 ⅓ cup rolled oats (120 g)
1 cup liquid egg whites (240 g)
¼ cup cashew milk (60 g)
2 scoops vanilla protein powder (64 g)
12 oz. bag of frozen cauliflower rice, steamed (340 g)
2 tsp. vanilla extract
2 tsp. baking powder
1 tsp. cinnamon
½ tsp. kosher salt
Optional: liquid Stevia to taste (I prefer without)

Preheat the oven to 350°. Steam the cauliflower until it’s nice and soft, according to package directions. I make sure and buy a steamable cauliflower that I can microwave right in the bag.

Add all ingredients to a large bowl, including the steamed cauliflower, and combine well. Pour into a greased or parchment-lined 7x9 pan. (9x13 works! They’ll just be a little thinner.) Bake for 30–35 minutes or until fragrant and starting to brown on top.

Cut oats into six pieces. Serve warm or cold! Store in the fridge for breakfast or snacks throughout the week. We love ours with whipped cream, yogurt, nut butters, and all kinds of fruit! Finish with a fresh pinch of flake salt.

NOTES:
I highly suggest using frozen cauliflower in this recipe rather than fresh. I find the fresh to have a stronger cauliflower flavor.

GF/DF: Yes! Just make sure to use a dairy-free protein powder and gluten-free rolled oats.
