ingredients ✨(gluten-free, dairy-free, vegan) (serves 8-10)

▪️2 - 2 ½ pounds Yukon gold potatoes
▪️1 tbsp avocado oil or olive oil
▪️1 small onion, chopped
▪️minced garlic (4 cloves)
▪️1 cup coconut cream or canned coconut milk (can also sub preferred creamer / heavy cream if not dairy-free)
▪️1 cup unsweetened almond milk (or preferred milk)
▪️¼ cup dairy-free butter (we like Miyokos - ghee or unsalted butter work too if not dairy-free)
▪️1/2 tsp sea salt + 1/4 tsp black pepper
▪️¼ cup vegetable broth
▪️2 Tbsp tapioca flour (or arrowroot flour - cornstarch works too)
▪️4 tbsp nutritional yeast (or you can shred in your favorite dairy-free cheese (or regular) if preferred)
▪️1 tsp Dijon mustard
▪️fresh chopped herbs

✨Optional Topping

▪️1 1/4 tbsp gf white miso paste (Marukome or Eden Foods for organic + gluten-free or Miso Master for soy-free)
▪️5 cups vegetable stock / vegetable broth
▪️6 oz gf noodles of choice (fresh or dried ramen noodles, we like Lotus Foods Ramen, Koyo Ramen or rice noodles for gluten-free - can also sub with shirataki, hearts of palm noodles, edamame or cassava flour spaghetti for grain-free)

✨Veggies + Protein
▪️1 carrot
▪️2 bok choy
▪️7- oz shiitake, cremini or button mushrooms
▪️One 10-12 oz block organic extra-firm tofu - season with 1 tbsp coconut aminos + 1-2 tbsp Sriracha (or hot sauce of choice - can omit if sensitive to spice) + 1 tbsp maple syrup - pan fry until crispy [can sub with cooked protein of choice - if not plant-based can add a softboiled jammy egg]

✨garnish chopped green onions + cilantro + red pepper chili flakes + sesame seeds + nori or toppings of choice
