LIME CILANTRO RICE đŸ’šđŸšđŸ‘‡đŸŒ

Ingredients (this made enough for 8 people):
-4 tablespoons extra virgin olive oil
-1/2 a yellow onion, diced
-4 garlic cloves, finely chopped
-3 cups basmati rice, or other long-grain white rice (rinsed)
4 and a 1/2 cups water
1 teaspoon sea salt
1-2 limes (zest + juice)
1 cup chopped cilantro

Steps:
-in a medium saucepan, sauté onions in olive oil for a few minutes on medium-high heat until slightly translucent
-then add garlic and sauté for another minute
-add rice to the saucepan and sauté until rice is lightly browned
-add water, lime zest and salt and bring to a boil
-once bubbling, cover and reduce heat to low
-cook the rice covered for 15-20 minutes, then remove from heat and let sit covered for another 10 minutes
-add rice to a bowl and top with lime juice and cilantro. Mix together and add more salt as needed

FAJITA VEGGIES đŸ‘‡đŸŒđŸŒ¶ïž

Ingredients:
-cauliflower
-red bell pepper
-yellow onion
-extra virgin olive oil
-garlic powder
-sea salt
-black pepper

Steps:
-preheat oven to 400F (convection)
-add veggies to a large baking tray (I lined with foil)
-drizzle lots of olive oil and massage it into the veggies
-add lots of garlic powder, salt and pepper and massage it in as well
-convection roast at 400F for about 20-25 minutes or until lightly browned (check halfway through and move the veggies around for even cooking)

CHICKEN đŸ‘‡đŸŒ
-ground chicken breast
-@sietefoods taco seasoning (follow instructions)

HEALTHY ORANGE CHICKEN 🍊// this is totally #dairyfree and #glutenfree (with gf soy sauce). It's also a low sugar option with just fresh orange and honey for sweetness!! SAVE this for later and let me know if you try it!

The chicken:
- lots of salt and pepper
- add avocado oil to a pan and cook on medium-high heat - 6 minutes on each side
- set aside and slice into cubes

The sauce:
Combine...
- 1/4 cup fresh orange juice (or the juice of one full orange)
- Zest of one orange
- 1 + 1/2 tablespoons soy sauce, gluten free soy sauce or coconut aminos
- Freshly grated ginger (approx 1 inch knob)
- 1/2 tablespoon honey (or more for added sweetness)
- Scallions
Once the chicken is cooked, add your sauce to the same pan. Cook for about 10 minutes, stirring every minute or so.
You want it to bubble and thicken.
Add chicken back in and mix. Then add chicken to a bed of brown rice and top with sesame seeds. Enjoy!

Rice:
-brown rice
-bone broth
-steps: cook according to package instructions- use bone broth in place of water

Tzatziki:
-1 cup whole milk greek yogurt made locally in New England
-1/2 cup finely shredded cucumber (squeeze out the water after shredding)
-1/2 tablespoon extra virgin olive oil
-1/2 a lemon, squeezed
-1 garlic clove, grated
-1/4 tsp salt
-1 or 2 tablespoons fresh mint, chopped

Salad:
-2 roma tomatoes, diced
-1/2 a red onion, diced
-2 mini cucumbers, diced
-parsley, finely chopped
-1/2 a lemon, squeezed
-1 tablespoon extra virgin olive oil
-heavy pinch of sea salt

Harissa Chicken:
-combine harissa paste and chicken strips
-broil @ 500F for 10-12 minutes

Bowl:
-in a bowl, add brown rice, tomato-cucumber salad, harissa chicken, Kalamata olives, tzatziki, hummus, chickpeas and feta sourced locally in New England. Top with fresh parsley and enjoy! #recipes #healthyrecipes #healthyfood
