These trending Biscoff pastry twists take under 30 minutes to make and go *so* well with a scoop of our Plant Based Madagascan Vanilla ice cream! Why not bake a batch up this weekend - you won't regret it! 😍
Find the recipe below and be sure to hit SAVE for later! 😁
Ingredients:
• 1 roll of ready-rolled puff pastry (ensure it's suitable for vegans, to keep the recipe plant based)
• 3 heaped tablespoons of Biscoff Spread
• 3 crushed Biscoff biscuits
• 1 tbsp plant based milk, to glaze
• 1 tub of Jude's Plant Based Madagascan Vanilla ice cream
Method:
• Pre-heat the oven to 200º/180º fan. Unroll the puff pastry and spread the Biscoff on one half of the pastry.
• Sprinkle on 3/4 of the crushed biscuits and fold one side of the pastry on top of the other. Press down gently.
• Use a pizza cutter to slice the pastry in half, then quarters and then each quarter into 3.
• Take each slice and twist 3-4 times, then roll one end in to create a knot shape. Press gently to seal.
• Glaze with plant based milk and sprinkle on top the remaining crushed biscuits.
• Bake for 15 minutes, or until cooked through and golden.
• Serve warm with a scoop of Jude's ice cream! Pop any leftovers into a container to enjoy later!

💚 Method:
Add the mint, gin, lime juice and elderflower cordial, mix to combine (use a cocktail muddler if you have one!) Add the ice, cucumber strips and top up the glass with cloudy apple juice - leave enough space for the ice cream! Carefully add a scoop of ice cream to the glass - sit back and enjoy!

• 150g caster sugar
• zest of 1 lemon
• 150g white chocolate chips
• 1 large egg
• 225g self-raising flour
• ½ tsp fine sea salt
• Jude's ice cream - we opted for Salted Caramel!

• Pre-heat the oven to 190º/170º fan.
• Cream together the butter and sugar until light and fluffy.
• Add the egg and lemon zest and mix again.
• Add the flour and salt and mix until combined.
• Pour in the raspberries and white chocolate chips and gently mix until just combined.
• Portion the cookie dough onto the trays - bake in batches if needed!
• Bake for 15 minutes or until golden brown
• Remove from the oven and allow to completely cool before constructing your sandwiches
• Once cool, add a scoop of ice cream to the flat side of a cookie and sandwich another cookie ontop - enjoy!

1 roll of ready-rolled shortcrust pastry
Zest of 1/2 a lemon
500g mixed summer fruits (defrost first if using frozen)
1 tbsp cornflour
1 tbsp caster sugar, plus extra for sprinkling
2 tbsp strawberry jam
Method:
Pre-heat the oven to 190°C/170°C fan.
In a bowl, combine the lemon zest, summer fruits, cornflour, and sugar.
Unroll the pastry and lightly score a 5cm border. Use a fork to poke holes in the bottom of the pastry.
Spread 2 tbsp of strawberry jam within the border, then add the fruit mixture on top.
Fold up the sides of the pastry, gently pressing as you go. Sprinkle additional caster sugar over the pastry crust.
Bake in the oven for approximately 40 minutes or until the crust turns golden brown.
