INGREDIENTS:
2 eggs
1/2 cup Joolies date syrup
1/2 cup pumpkin puree
1/2 cup coconut oil, melted
1 1/3 cup gluten-free rolled oats
2 tbsp coconut flour
1 tsp vanilla
1 tsp baking soda
2 tsp pumpkin pie spice
pinch of salt
1/2 cup dark chocolate chips
DIRECTIONS:
Preheat oven to 350 degrees and grease an 8x8 or 8x6 baking dish.
In a food processor or blender, moderately process the oats until the consistency is a balance of fine and chopped oats. Can substitute with 2/3 cup oat flour + 2/3 cup oats.
In a large bowl, whisk eggs, date syrup, pumpkin puree, and vanilla together. Add in melted coconut oil and whisk well.
Next add in the oat mixture, coconut flour, baking soda, pumpkin pie spice, and salt. Mix until well combined. Stir in chocolate chips if desired.
Transfer mixture to greased baking dish and sprinkle more chocolate chips on top.
Bake for 25-30 minutes.
Let it slightly cool, slice and serve!
