I boil it, dry it in my oven at 170 F overnight until it is glass hard, then fry. Starting in cold oil seems to make them fluffier. Hot oil works too

Hey chef here, the best results you can get is by cutting the most fat off leaving only the skin (very important) then dehydrate the skins (pt1)

after boiling it scrape off any extra fat attached to the skin, then low heat dry out as much as possible then fry
