Dry ingredients  
* 125g self raising flour  
* 25g cocoa powder  
* 0.5 tsp baking powder  
* 150g goden caster sugar  
* 0.25 tsp espresso powder (optional) helps enhance the chocolate flavour  
* 0.25 tsp salt  
* 75g milk chocolate chips  
* 75g dark chocolate chips
Wet ingredients  
* 1 large egg  
* 75ml whole milk  
* 75g sour cream  
* 50ml vegetable oil  
* 0.5 tsp vanilla extract  
Preheat oven to 220°C fan. Line a muffin tray with 6 liners.  
Whisk dry ingredients together (apart from the choc chips). Whisk wet ingredients together in a separate bowl. Fold the wet into the dry. Fold in the chocolate chips.  
Divide between the liners, filling each to the top. Sprinkle a few chocolate chips on top.  
Leave the unbaked muffins to 'rest' for 20 minutes at room temperature. Then bake for 5 mins at 220°C fan. Reduce the temp to 180°C fan and bake for another 15-20 minutes until the muffins are risen and spring back when lightly pressed.   
Transfer to a cooling rack and enjoy!
