Dry ingredients
* 125g self raising flour
* 25g cocoa powder
* 0.5 tsp baking powder
* 150g goden caster sugar
* 0.25 tsp espresso powder (optional) helps enhance the chocolate flavour
* 0.25 tsp salt
* 75g milk chocolate chips
* 75g dark chocolate chips
Wet ingredients
* 1 large egg
* 75ml whole milk
* 75g sour cream
* 50ml vegetable oil
* 0.5 tsp vanilla extract
Preheat oven to 220°C fan. Line a muffin tray with 6 liners.
Whisk dry ingredients together (apart from the choc chips). Whisk wet ingredients together in a separate bowl. Fold the wet into the dry. Fold in the chocolate chips.
Divide between the liners, filling each to the top. Sprinkle a few chocolate chips on top.
Leave the unbaked muffins to 'rest' for 20 minutes at room temperature. Then bake for 5 mins at 220°C fan. Reduce the temp to 180°C fan and bake for another 15-20 minutes until the muffins are risen and spring back when lightly pressed.
Transfer to a cooling rack and enjoy!

• 160g unsalted butter, melted⠀
• 100g caster sugar⠀
• 150g light brown sugar⠀
• 1 medium Egg + 1 egg yolk⠀
• 1 tsp vanilla extract⠀
• 280g self-raising flour⠀
• 0.5 tsp salt⠀
• 200g your choice of additions e e.g chocolate chips, chopped nuts, M&Ms, Oreos etc. ⠀
⠀
1. Mix melted butter and two sugars together.⠀
2. Mix in the egg, egg yolk and vanilla.⠀
3. Fold in flour and salt.⠀
4. Fold in your additions.⠀
5. Roll into balls and freeze for 2 hours.⠀
6. Bake for 12 minutes until golden and firm on the outside, but pale and soft in the middle.⠀
7. Leave to cool on the baking tray for 20 minutes, then tuck in and enjoy!⠀

1. Preheat oven to 160°C fan / 180°C conventional. Grease and line the base of a 30x20cm traybake tin. ⠀
2. Mix the sugar, eggs, sunflower oil and vanilla extract together. Set aside.⠀
4. Stir the flour, mixed spice and orange zest together in a seperate bowl.⠀
5. Pour the dry ingredients into the wet and fold together until combined.⠀
6. Fold in the grated carrot and chopped walnuts.⠀
