LEMON CHICKEN SOUP
January is all about citrus, so we thought we'd get creative with the method of delivery. With a lemon chicken soup! Easy, delicious, nutritious, citrus.
✨Recipe✨
Serves 4-6
3 tablespoons avocado oil
1 medium onion, chopped
2-3 bay leaves
3 large garlic cloves, minced
1/2 teaspoon dried oregano
2 quarts chicken stock (store-bought or homemade)
2 cooked chicken breasts, chopped (or use rotisserie chicken)
1/2 cup julienned sun-dried tomatoes
1 cup cooked basmati rice
1 lemon, juiced
1/2 ounce fresh dill
1 1/2 teaspoons sea salt
1. Heat oil in a stock pot and add onion. Sauté onion until tender.
2. Add garlic, chilies, and oregano. Cook for a few seconds then add stock.
Bring soup to a gentle simmer and cook for 5 minutes. Add remaining ingredients and adjust seasoning to taste.
