Double coated, twice cooked fried chicken - undeniably tasty, perfectly moist inside & crispy on top🍗🤌🏾

RECIPE👇🏾
Ingredients:
* 1.4 kg chicken (thigh and lower quarter parts of the chicken)
* 200ml heavy cream
* 2 tbsp lemon juice
* 1 tbsp Tabasco
* 2 tbsp Seasoning mix (smoked paprika + garlic powder + onion powder)
* Salt
* Black pepper
* 500g pack cake flour (or all purpose flour + corn starch)
* 500ml milk
* Sunflower oil for frying
Instructions:
1. Place the chicken in a bowl, add lemon juice Tabasco, seasoning mix, salt & black pepper). Mix, cover with plastic wrap, place in the fridge and allow to marinate for 2 hours).
2. In a separate bowl, mix the cake flour, seasoning mix, salt and pepper.
3. Take a piece each of the marinated chicken and coat them in the flour mixture. Set the coated chickens on a tray to rest. (Do not discard the flour mixture or the leftover cream from the marinate).
4. Pre-heat oven to 180 degrees Celsius and line and baking tray with baking paper.
5. Pour the sunflower oil in a deep pot and allow to get really hot (if you have a thermometer, minimum 180 degrees Celsius. Or insert a skewer and if the oil bubbles steadily but not faintly then it’s hot enough)
6. In the mean time prepare the second coating mixture. Pour the milk into the bowl with the leftover cream used in marinating the chicken, mix well with some more seasoning.
7. Take one piece of chicken at a time and firstly deep into the milk mixture, then the same flour mixture and then carefully place into the hot oil. Fry without moving for 5 minutes then flip to the other side and fry for another 5 minutes.
8. Transfer the fried chicken into a baking tray lined with baking paper. Place in the pre-heated oven and cook for 10 to 15 minutes (or until a thermometer inserted into a piece of chicken reads 165 degrees Celsius.
9. Serve as you like (perfect with some waffles and maple syrup)
