Ingredients:
* Lean ground beef 1lb, 93%
* 2 cups shredded cabbage (green, purple, or a mix)
* 1 cup shredded carrots
* 1/2 cup chopped green onions
* 2 large eggs, whisked
* 2 cloves garlic, minced
* 1 teaspoon fresh ginger, minced
* 1-2 tablespoon low-sodium soy sauce
* 1-2 tablespoon rice vinegar
* Avocado oil spray
* Salt and pepper, to taste
* Optional: fresh cilantro or Thai basil, for garnish
Low-Calorie Sauce:
1⁄2 cup low-sodium soy sauce
1⁄4 cup water
3-4 tablespoons rice vinegar
1-2 tablespoon honey
1-2 tablespoon hot sauce (like sriracha or chili garlic sauce)
1⁄2 teaspoon garlic paste
1⁄2 teaspoon ginger paste
1⁄2 teaspoon sesame oil
Cilantro/chili to garnish (optional)

For the Mac n Cheese Sauce:

1 cup cottage cheese
1 cup broth (chicken or veggie)
2 light laughing cow cheese wedges
2-3 tbsp of mac n cheese powder
Salt n pepper to taste
3 velveeta cheese singles
Smoked paprika and black pepper, to garnish
Makes 4 servings, per serving:
