Vegan Beet Poke Bowl đŸŒ±đŸŒˆ Swap traditional tuna with marinated cook beets for a super fun plant-based twist! This colorful bowl is a favorite for a quick & healthy lunch or dinner!

you’ll need


‱ Sushi rice or grain of choice, cook as directed
‱ HOPE Avocado Lime Hummus
‱ 3 Beets, cooked and cut into œ inch pieces
‱ Radish, sliced thin
‱ Cucumber, peeled and sliced into rounds
‱ Carrot, ribbons
‱ Edamame, shelled
‱ Poke Marinade: 1 tbsp soy sauce, 1 tbsp avocado oil, 1 tsp sesame oil, 1 tsp fresh grated ginger, 1 tbsp of agave,
‱ Peanut Sauce Dressing: 2 tbsp peanut butter, 2 tbsp hummus, 1 tbsp rice wine vinegar, 1 tbsp soy sauce, 1 tsp sesame oil, 1 tsp sriracha (optional), water, to thin
‱ Garnish: scallions, mint, sesame seeds, chopped peanuts

How to make

1. Cook rice as directed.
2. Make the beet poke— cut cooked beets into œ inch pieces, set aside. In a bowl combine all poke marinade ingredients, whisk until combined, add beets and toss until covered, Add sesame seeds and scallions to taste, toss again. Marinate in the fridge for 15 min or up to a day.
3. Prep the veggies— chop radish and cucumber, make carrot ribbons with a peeler, slice avocado, shell edamame (if necessary), chop peanuts.
4. Make the peanut dressing— combine peanut butter, hummus, rice wine vinegar, soy sauce, sriracha (optional), and thin with water if needed. Whisk together until combined.
5. Assemble the poke bowl— add cooked rice, prepped veggies, hummus and marinated tuna to a bowl, garnish with scallions, mint and sesame seeds.
6. Pour the peanut dressing over the salad. Add gradually to taste. Enjoy!

Recipe: Chocolate Strawberry Truffles đŸ’–đŸ€€

You’ll need:

1 tub HOPE Chocolate Plant-Based Dip
œ C Almond Flour * can also use coconut
1.2oz bag freeze dried strawberries
3.2 oz bar of chocolate
1 tbsp coconut oil

Directions
1. In a bowl, add Hope chocolate plant-based dip, almond flour and freeze dried strawberries and mix with a spoon until well combined. Freeze for 10 about min.

2. Roll the dough into snack size balls (1-1 œ inches) and place the balls onto a prepared tray.

3. Melt chocolate and coconut oil in the microwave. Stir every 20 sec to avoid scorching. Roll the balls in the melted chocolate until fully covered. Place on a tray and sprinkle with leftover freeze dried strawberry powder.

4. Freeze for at least 1 hr until chocolate is set.

5. Store the truffles in an airtight container in the refrigerator until serving or for up to 5 days.

Recipe: Vegan Crunchwrap đŸ€€

Ingredients:
· 8 oz tub of HOPE Spicy Avocado hummus
· 4 large burrito size flour tortillas
· 4 tostada shells
· 4 small taco size flour tortillas
· 1 package of vegan ground beef (we used @impossible_foods !)
· taco seasoning, to taste
· 2 tomatoes, chopped
· œ C iceberg lettuce, finely shredded
· œ C vegan shredded cheddar cheese (we used @daiyafoods !)
· œ C vegan sour cream (we used @violife_foods )
· œ C vegan cashew queso (we used @coreandrind !)

Instructions:
1. In a large frying pan over medium heat cook vegan meat until browned, season to taste as it cooks. Remove from heat and set aside.
2. To make the crunchwraps: Place 1 of the large burrito size tortillas on a work surface. Layer your ingredients— start with a spoonful of hummus, top with vegan beef, and a layer of cashew queso. Next top with the tostada shell. Then spread a layer of sour cream, top with a layer of lettuce, tomatoes and shredded cheese. Place the smaller taco size tortilla and working clockwise fold the edges of the tortilla toward the center. It will look like a hexagon shape.
3. In a frying pan over medium heat and a bit of oil, cook the crunchwrap for about 3 min per side or until golden and cooked through. Cut and serve. YUM!

Here’s HOPE-ing lunchtime always looks like this! đŸ„ąđŸ± Try this recipe for a bento-style sushi rolls with HOPE Hummus! 👇😋

you’ll need:
1.5 C Rice, sushi or rice of choice
2-3 tbsp HOPE Original Hummus, or to taste
Various vegetables, sliced into long thin strips or sticks, we used, cucumber, carrots, avocado and mango
1 large tortilla

To make:
1. Cook rice as directed.
2. Let sushi rice cool. As it is cooling, slice the veggies into long strips.
3. On a bamboo mat or flat cutting board with a layer of cling wrap on top: lay the tortilla down flat and, press rice in an even layer on top, add the hummus and spread an even layer on top of the rice (can also mix the hummus into the rice before spreading for a sticky rice that holds nicely)
4. Add desired veggies to one side of of the rice mixture leaving a bit of space along the edge.
5. Start to roll, using the mat and cling wrap to bring the rice towards you as you form the roll. Work slowly if you need to making sure the rice and veggies are gradually incorporated.
6. Once you have formed a nice log shape, place the roll in the refrigerator for 5-10 min (optional—this makes the roll easier to cut). When you are ready, remove the cling wrap and cut the roll with a very sharp knife into 8-10 pieces.
7. Serve with additional hummus or dipping sauce! Pack in a lunchbox with kid-friendly chopsticks and desired sides. So fun!!

Ingredients:
‱15 oz tub of HOPE Sea Salt & Olive Oil Hummus
‱ 12 lasagna noodles
‱ 1 zucchini, finely diced
‱ œ onion, finely diced
‱ œ C mushrooms, diced
‱ 2 garlic cloves, finely diced
‱ 2 carrots, peeled and finely diced
‱ 1 C fresh spinach
‱ 10 oz Vegan Mozzarella Cheese (we used a combination of Miyoko’s liquid mozzarella and Vevan brand shredded mozzarella!)
‱ 24 oz jar of marinara sauce, or homemade

Instructions:

1. Cook lasagna noodles until al dente, about 9 min.

2. Make the filling: sauté onion, garlic, zucchini, carrots and mushrooms over medium heat until softened, about 4-5 min. Remove from heat. Stir in spinach. In a medium size bowl add 15oz of HOPE Sea Salt & Olive Oil hummus, mix in the cooked vegetables and stir to combine.

3. Spread an even layer of marinara sauce across the bottom of a casserole dish. (about œ a cup).

4. Lay the cooked noodles onto a clean surface. Add a spoonful, about 2-3 tablespoons, of hummus filling onto each noodle, evenly covering. Roll the noodles tightly and arrange in the casserole dish.

5. Cover with additional marinara sauce and vegan mozzarella cheese. Bake at 375 for about 35 min, or until warm and bubbly.
