This corn is kinda weird lookin’ but really, it’s hella good. You get more corn off the cob with the aerodynamics.

Chopping it is super sketchy so BE CAREFUL. Use a sharp knife and just BE SUPER CAREFUL.

Ingredients:
🌽3 Ears of corn, cut into quarters lengthwise.
🌽3 tablespoons olive oil
🌽1.5 tablespoons HLM BBQ Back Rub Seasoning
🌽1 tablespoon brown sugar (optional)
🌽BBQ Sauce to glaze (optional)

1. In a small bowl, combine olive oil, seasoning and brown sugar. Brush thy corns with the mixture.
2. Smoke at 250F for 40 mins, brush with bbq sauce for 10 more minutes.
3. Garnish with chopped chives and serve!

Japanese Fried Chicken otherwise known as Karaage. I was pumped when Joshua Weissman’s texture over taste book came out because I knew I was gonna learn something new and boy did he deliver!

This is our first big beautiful quest for tasty things and we are focusing on texture. This is so crunchy and so flavorful and so easy.

Marinade:
2 tablespoons Tamari (GF) or gluten free soy sauce or regular soy sauce
1 tablespoon distilled white vinegar
1 teaspoon grated ginger
1/2 teaspoon ground white pepper
3 tablespoons Sriracha
1 1/2 teaspoons salt

2 cups cornstarch
2 pounds boneless, skinless chicken thighs, cut into 1 inch chunks
2 1/2 quarts vegetable oil

Hot flavored oil:
1 cup frying oil
1/4 cup HLM BBQ Back Rub

Optional Sriracha mayo -
Combine the following:
1/2 cup mayonnaise
2 tablespoons Sriracha sauce (adjust to taste for spiciness)
1 teaspoon lime juice (optional, for some tang)
1/2 teaspoon honey (adjust to taste for sweetness)

Instructions:

1. Whisk marinade ingredients together and submerge chicken chunks in the marinade up to overnight.
2. Heat vegetable oil to 350°F
3. Toss the chicken in the cornstarch until it’s completely coated.
4. Working in batches, fry the chicken nuggets for 4-5 minutes until 165°F. Internal temp.
5. Remove chicken from oil and place on wire rack.
6. In a heatproof bowl add the Back Rub seasoning and carefully pour in one cup of hot frying oil and whisk together. Toss the fried chicken nuggets into the hot seasoning mixture.
7. Remove chicken from the oil and serving immediately with a drizzle of hot honey and or a Sriracha mayo.

🪄One whole chicken
💦1x bottle
@livezesti Garlic Lovers hot sauce
🪄1.5 cups Wagyu Beef Tallow @southchicagopacking
🪄1 shallot, finely minced
🪄1/3 cup HLM BBQ Back Rub Seasoning
🪄1/3 cup Avocado Oil

1. Melt Wagyu Beef Tallow in a saucepan, stirring 2 tablespoons of hot sauce and the minced shallot. Bring to a simmer and cook for 5 minutes stirring frequently.
2. Drain the Wagyu over a sieve into a jar, and reserve the shallot and garlic chunks for next step.
3. Add the cooked shallot and garlic to a bowl along with the Back Rub seasoning, 3 tablespoons of hot sauce and avocado oil to make the GOO. Whisk until well combined.
4. Prepare the chicken frog style and using an injector, inject the chicken all over with the infused Wagyu beef tallow.
5. Rub the chicken with the GOO.
6. Cook at 350F until 165°F at the deepest part of the chicken.
7. Let the chicken rest for 30 minutes and then carve the chicken for serving.

Ingredients:

For the Tidal Wave Teriyaki Shrimp:
1 pound large shrimp, peeled and deveined
1/4 cup @livezesti Tidal Wave Teriyaki sauce
2 tablespoons olive oil
2 tablespoons @hlmbbq Back Rub
1 tablespoon red pepper flakes (we used Gochugaru)

For the Smoldering Soy Sesame Sauce:
1/4 cup @livezesti Smoldering Soy Sauce
2 tablespoons sesame oil
2 tablespoons mayonnaise
1 tablespoon honey
1 teaspoon fresh ginger, grated
1 clove garlic, minced or pressed
1 teaspoon sesame seeds (for garnish)
Chopped green onions (for garnish)

Instructions:

1. In a bowl, combine the Tidal Wave Teriyaki sauce, olive oil, and Back Rub. Add the peeled and deveined shrimp to the marinade and toss to coat evenly. Let them marinate for about 15-30 minutes.
2. Preheat your grill to medium-high heat. You can use a traditional barbecue grill or a stovetop grill pan. Thread the marinated shrimp onto skewers or use a grill basket to keep them from falling through the grill grates.
3. Grill the shrimp for 2-3 minutes on each side or until they turn pink and slightly charred, basting with additional Tidal Wave Teriyaki sauce while grilling.
4. In a small bowl, whisk together smoldering soy sauce, sesame oil, mayonnaise, honey, grated ginger, and minced garlic. Mix until the sauce is smooth and well combined.
5. Remove the grilled shrimp from the grill and place them on a serving platter. Sprinkle sesame seeds and chopped green onions over the shrimp for added flavor and garnish.
6. Serve the Tidal Wave Teriyaki Grilled Shrimp with the Smoldering Soy Sesame Sauce on the side for dipping.

Ingredients:

🦬1x Bottle @livezesti Creamy Habanero Buffalo sauce

For the Chicken:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 cup buttermilk
1 cup corn starch
3 tablespoons HLM BBQ Razzle Dazzle seasoning

For Skewers:
Wooden skewers, soaked in water for 30 minutes
OR 8 inch metal skewers from Amazon.

Finish with Zesti’s Dantes 9th Circle ranch

Instructions:
1. Marinate the Chicken:
Place the chicken pieces in a bowl, cover in the buttermilk and 1/2 a cup of the Creamy Buffalo Sauce.
Let them marinate for at least 30 minutes, or even overnight in the refrigerator.
2. In a shallow dish, mix together the cornstarch and Razzle Dazzle seasoning.
3. Remove the chicken from the buttermilk and let the excess drip off.
4. Coat each chicken piece with the seasoned cornstarch mixture, pressing it onto the chicken to adhere. Thread onto skewers.
5. Grease your air fryer and cook at 375F for 8-10 min, flipping halfway through.
6. While the chicken skewers are still hot, brush or drizzle them with the Creamy Habanero Buffalo sauce to coat them evenly.
7. Finish with a drizzle Dante’s 9th Circle sauce and chives.

🐔 1x chicken breast, butterflied and poked a lot with a fork3x tablespoons HLM BBQ 🧂 Back Rub seasoning
🥓 2x Slices of bacon (bake 1lb bacon @ 375F / 15-20 min)
🤠1/4 cup Bacon Paradise Ranch dressing (recipe released earlier this week)
🧀 1x slice of pepper jack cheese
🥬 Handful of coleslaw mix
🧈 2 tablespoons melted butter
🥒 4 pickle slices
🍑 Brioche Bun

Instructions:

1. Drizzle both sides of the chicken breast with the Fiery Dill Pickle hot sauce as a binder. Season both sides with HLM BBQ Back Rub.
2. Air fry at 400F for 10-14 minutes. Flipping half way.
3. Prepare the slaw. Combined 2 tbsp Fiery Dill Pickle hot sauce with Bacon Paradise Ranch with the coleslaw until well coated.
4. Make spicy dill pickle butter. Mix melted butter with 2 tablespoons Fiery Dill Pickle hot sauce.
5. Once chicken hits 165F internal temp, toss in spicy dill pickle butter then melt 1 slice pepper jack cheese onto breast.
6. Toast brioche bun. Starting on the bottom bun add Bacon Paradise Ranch, 4 bread and butter pickle slices, the chicken breast, 2 slice of bacon, slaw mix, more ranch and the top bun.

I was not prepared for that good of a steak. The marbling is insane.

Also, be careful with very high heat! It can burn the crust, I definitely didn’t burn mine 🤷‍♂️

Ingredients:

🥩 1x 10oz Snake River Farms American Wagyu Ribeye
🥩 2 pounds Wagyu beef tallow
🧄 10 garlic cloves peeled
🧂 Truffle salt to taste

Supplies:
🪵 Smoker that can maintain 200F (or oven)
👨‍🍳Oven safe dish, deep enough to FULLY submerge the ribeye
🌡️Meat thermometer

Instructions:

1. Take a few minutes and admire the insane marbling on the Snake River Farms American Wagyu Ribeye, let it come to room temp.
2. Place beef in an oven-safe dish with garlic cloves, completely cover in beef tallow.
3. Smoke at 200F until steak is at 110F - 115F depending on how you like it cooked. Remove and let rest, prepare charcoal chimney 1/2 full, light, place the cooking grate over the chimney, and let the charcoal burn until it’s covered in ash.
4. Grill the steak until you achieve a hard crust, searing all sides.
5. Slice steak and sprinkle with salt. Serve immediately!

🔥 1 tablespoon Carolina Reaper powder
🔥 1 tablespoon Trinidad Scorpion powder
🔥 1 tablespoon Ghost Pepper powder
🔥 2 tablespoons HLM BBQ Back Rub
🔥 1/4 cup melted butter

🔥 Coleslaw mix
🔥 4 pickle slices

1. In a well-ventilated area, while wearing a mask, gloves and goggles carefully mix together the rub. Use half to season the chicken and the other half for the paste.
2. Add half the seasoning to bowl with melted butter and mix well.
3. Lightly drizzle Dantes 9th Circle sauce on the chicken breast as a binder. Season heavily with the rub mixture.
4. Prepare slaw by combining with Dante’s 9th circle and a teaspoon of angry pepper seasoning until well coated.
5. Grill chicken over medium heat until cooked to at least 165°F, turning the chicken as to not burn the rub.
6. Brush the chicken with the paste the last few minutes of cooking, add a slice of cheese.
7. While wearing gloves, Sauce the bottom bun with Dantes 9th Circle. Then add 4 pickles slices, the chicken topped with the coleslaw and more Dantes ninth circle sauce, and the top bun.

Confit has recently become one of my favorite kitchen power houses of flavor and versatility.

NOTE: it should keep for about 2 weeks when stored properly.

Recipe:

🧄 Smoked Garlic Confit/infused olive oil l

Ingredient:

1 head of garlic peeled, germ removed - or buy pre-peeled garlic.
Olive oil to cover
Optional: herbs like rosemary or oregano to infuse the oil

1. Place garlic and herbs in an over-safe dish, and cover (submerge completely) in olive oil.
2. Smoke or bake at 250F for 1.5 to 2 hours, until the garlic is fork tender. It should be soft like butter.

-combine with butter, parsley and parmesan to make garlic bread (bake 375F for 8 -10 minutes)
-Use the olive oil for eggs, veggies, and roast potatoes.
-Spread it over steak during the last 2 min of cooking.
-Use the to make a paste with herbs to rub on chicken (recipe next week)
-Spread the garlic on toast.
-Combine with butter, parsley, parmesan cheese, and salt for a garlic butter paste.

🌶️ Smoked Jalapeño Confit Wings

1lb chicken wings
Mustard binder

6 Jalapeños, confit
10 garlic cloves, confit
Olive oil
Salt
Butter

1. Cut the stem off the jalapeños and slice each jalapeño into 3 pieces (cylinders).
2. Place jalapeños and garlic in an oven-safe dish and cover in olive oil.
3. Smoke at 250F for 1 hour 45 minutes.
4. Remove from smoker and let cool, increase smoker temp to 350F
5. Toss wings in mustard and seasoning and smoke until done, about 1 hour.
6. Mix jalapeño confit and garlic confit with softened butter and salt, and toss wings in the mixture until well coated.

🥔 Roasted Potatoes with infused olive oil.

1lb Golden little potatoes, scrubbed clean
1 tablespoon confit garlic olive oil
1 tablespoon confit jalapeño olive oil
Salt and pepper

1. Toss potatoes in both olive oils, salt and pepper.
2. Place in an oven-safe dish and smoke at 350F for about an hour, moving potatoes around every 20 minutes.
3. Serve when they are fork-tender
