Tuna Melt Bagel 🥯
▪️1 can tuna
▪️1/4 tin sweetcorn
▪️1 heaped tbsp mayo (I used vegan to keep it egg free)
▪️1 tsp harissa paste
▪️fresh parsley
▪️Pinch Pepper
▪️Grated cheese (I used vegan to keep it dairy free)
1️⃣Mix the tuna + sweetcorn + mayo + harissa + parsley + pepper in a bowl
2️⃣Slice the bagel in half, top with the tuna along with grated cheese and place in the air fryer for 3 minutes at 200C (or in the oven for 10 minutes at 200C)

Fridge Raid Vegetable Risotto 👌 a delicious and simple way to clear the fridge out!
▪️1 onion
▪️2 garlic
▪️1/2 courgette
▪️4 mushrooms
▪️1/2 pepper
▪️1/2 cup frozen peas
▪️1 cup arborio risotto rice (210g)
▪️800ml veg stock
▪️1/2 block cheese, grated (I used vegan)
▪️Handful spinach
1️⃣Firstly, slice the courgette + mushrooms + pepper + onion + garlic
2️⃣Heat a pan with olive oil and add in the onion + garlic to fry for a few minutes until softened
3️⃣Now add the chopped veg and fry for 5 minutes to soften
4️⃣Add the risotto rice + stock and stir. Allow to simmer for 20 minutes
5️⃣Finally, grate in the cheese and add the spinach and stir to combine

THE BEST Roasted Tomato & Garlic Soup 🍅🧄

Makes 3 portions:
🛒 Ingredients:
▪️ 1.2kg large vine tomatoes
▪️ 500g cherry tomatoes
▪️ 1 small whole garlic bulb
▪️ 1 red onion
▪️ handful fresh basil
▪️ 2 tsp veg stock (or 1 stock cube)
▪️ 1 heaped spoon yoghurt (I used coconut)
▪️ Generous pinch black pepper
1️⃣ Firstly, slice the large tomatoes, place on a baking tray.
2️⃣ Now slice off the end of the garlic bulb, drizzle over oil + salt and wrap in tin foil or baking paper placing on the baking tray
3️⃣ Slice the onion into quarters, adding to the baking tray
4️⃣ Add the small tomatoes to the baking tray, drizzle over oil + salt and bake for 45 minutes at 200C (fan)
5️⃣ Remove from the oven, unwrap the garlic and just allow to cool for 5 minutes
6️⃣ To a blender add the tomatoes (with all the juice) + onion + squeeze out the garlic bulbs + basil + stock powder/cube + yoghurt + pepper and blend
FAQ’s:
➡️ Can I freeze leftovers? Absolutely!
➡️ Is the yoghurt essential? No, you can leave it out if you wish. It’s there to add a little creaminess to the soup
➡️ Could I just use large tomatoes? Sure, go for 1.7k large vine tomatoes if you wish

Blackberry & Plum Cobbler 👌full recipe 👇
Serves 6
▪️300g blackberries
▪️7-8 plums (400g)
▪️2 tbsp coconut sugar
▪️1 tbsp corn starch
▪️1 cup plain flour (140g) - I use gluten free
▪️1 cup ground almonds (110g)
▪️4 tbsp coconut sugar
▪️4 tbsp coconut oil
▪️2 tsp baking powder
▪️pinch salt
▪️100ml milk of choice - I use almond
1️⃣ In a 9x9" square baking dish, add blackberries + halved plums (with stones removed) + coconut sugar + corn starch and mix
2️⃣ Then in a large mixing bowl add plain flour + ground almonds + coconut sugar + coconut oil + baking powder + pinch salt and mix together then add milk and further mix to combine
3️⃣ Once a paste-like mixture has been formed, use a spoon to evenly proportion 9 scoops of the mixture into the baking dish
4️⃣ Bake at 200C for 25 mins or until the top is golden brown

▪️1 stock pot (or stock cube)
▪️1 yellow onion
▪️3 cloves garlic
1️⃣ Firstly, roughly chop the tomatoes, onion and red pepper
2️⃣ Then place the above ingredients along with 3 cloves of garlic (with the skin on) in a roasting tin at 200C for 45 minutes
