Here’s a fun St. Patrick’s Day Breakfast idea for the fam! But also, these Green Eggs and Ham Cheesy Egg Bites slap any day of the week! They’re nutritious, delicious, and perfect for the babes and all you meal preppers. I love having them on hand during busy mornings when I don’t even have time to feed myself because they’ve got tons of protein and nutrient rich spinach! Snag the recipe below!
Green Eggs and Ham Cheesy Bites
🟢6 eggs
🟢1 cup low fat cottage cheese
🟢1 6 oz block gruyere, shredded
🟢2 cups fresh spinach
🟢1/4 tsp salt
🟢1/4 tsp garlic powder
🟢5 thin slices rosemary ham, roughly chopped
🟢nonstick spray
🟢boiling water for the water bath
✅Preheat oven to 300F degrees.
✅Add all ingredients (besides the ham!) to a food processor and blend on high for 2 minutes or until the eggs are fluffy and bright green and the spinach is pureed.
⭐️This is the only tricky part - you need to find a baking dish that fits your cupcake tins so that you can rest the cupcake molds on top of the water that will fill the baking dish.
✅Now that you’ve got your baking dish, you’ll want to fill it up a little less than half way with boiling water -WHY? Because you need this steam from the hot water to help the eggbites keep a custardy consistency.
✅If you have a great nonstick cupcake pan, then you can just spray it with nonstick or if you have kids like me, you can spray your nonstick into some cupcake wrappers. My kids like anything that looks like a cup cake so I opt into this method the most!
✅Now evenly divide the green egg mixture among the cupcake tins and then evenly distribute the ham on top. Use a knife to carefully push the ham down so it’s suspended in the eggs.
✅Carefully place the cupcake tin into the boiling water filled baking dish and place in the oven. Bake for 30 minutes or until the eggs are set. Remove from heat and let cool for 15 minutes. Keep refrigerated until you’re ready to enjoy!

SPICY PORK MEATBALLS
🌶️1 pound ground pork
🌶️1 large egg
🌶️1/2 cup panko
🌶️1/4 cup red onions finely diced
🌶️2 tbsp calabrian chili
🌶️1/4 cup @parmigiano
🌶️1 tsp italian seasoning
🌶️1 tsp garlic powder
🌶️1/2 tsp salt
GARLIC PARM DIPPING SAUCE
🧀 2 tbsp salted butter
🧀 6 cloves garlic, minced
🧀1 cup heavy cream
🧀 1/2 cup parm, finely grated
🧀kosher salt
DIRECTIONS
🧄 Preheat oven to 400F degrees.
🧄 Place all meatball ingredients in a large bowl and combine. Roll into Golfball sized balls and place on a baking sheet. Bake for 15-20 minutes or until cooked through.
🧄 When the meatballs have 10 minutes left, add butter and garlic to a small pan over medium heat. Once the butter has melted and the garlic and cook down for 2-3 minutes or until soft.
🧄Add in the heavy cream and a pinch of salt and let the sauce reduce and thicken for a few minutes before stirring in the parm. Taste and season with more salt and pepper if needed.

So i figured why not share my new approach that’s inspired by the smokehouse corn from 4 Rivers - bbq spot that is Floridians love! Smokehouse Skillet Corn
🌽1 tbsp olive oil
🌽1 cup red onion
🌽1 cup grape tomatoes, halved
🌽1 pinch red pepper flakes
🌽6 garlic cloves, roughly chopped
🌽2 cans sweet corn, drained
🌽1 tbsp salty butter
🌽1/4 cup cilantro, roughly chopped
🌽2 tbsp honey
🌽salt and fresh cracked pepper
🔥Add olive oil, red onion, tomatoes, red pepper flakes and a pinch of salt to a saute pan (I’m using @ourplace!) over medium heat. Cook down for 3 minutes or until tomatoes start to get jammy.
🔥Add garlic and cook for 2 minutes until tender and fragrant then add corn and another pinch of salt cook until heated through - about 1-2 minutes.
🔥Once hot, stir in butter, cilantro and finish with a drizzle of honey and some fresh cracked pepper and a sprinkle of finishing flaky salt.

✨Baked Feta Spaghetti Squash✨ it’s been almost 4 years since i first shared this recipe inspired by @liemessa and @tiiupiret and it’s still on constant rotation in our house! This is one of my favorite ways to enjoy it if I’ve been eating heavy all day and want something light yet satisfying. Grab the recipe below!
✨1 spaghetti squash, split in half and seeds removed
✨1 block feta (about 6-8 oz - i use @athenosfeta)
✨4 cloves garlic, minced
✨1 carton cherry or grape tomatoes, halved
✨1 handful basil
✨ balsamic glaze
✨ about 3-4 tbsp olive oil
✨ kosher salt
⭐️Preheat oven to 400F degrees.
⭐️Place split, seeded squash on a baking sheet and drizzle with olive oil and salt. Break the feta in half and place it in the middle of each squash. Evenly top with garlic, tomatoes, olive oil and another pinch of salt.
⭐️Bake for an hour/hour 15 until squash is tender and cheese is melted. Stir it all together and top with basil and a drizzle of balsamic.
⭐️Best if enjoyed right away!

🍋1/2 tsp of Dijon mustard

INGREDIENTS
2 tbsp salted butter
2 large onions, thinly sliced
1 tbsp olive oil
4 garlic cloves, minced
1/2 tsp dried thyme
1 tbsp balsamic
1/4 cup dry white wine
1/2 lb rigatoni
1 tbsp Worcestershire sauce
1 32 oz container beef bone broth (about 4 cups)
1 5.3 oz package of @emmicheeseusa Le Gruyère® AOP, shredded
1/4 cup heavy cream
INGREDIENTS
Add butter to a heavy bottomed skillet over medium heat. Once melted, add onions, olive oil, and a hefty pinch of salt. Cook for 20 minutes, stirring often until soft and starting to brown.
Add garlic and thyme and cook for 3 more minutes or until the garlic is tender and fragrant.
Add balsamic vinegar and white wine to deglaze the pan - scraping up all the little bits on the bottom of the pan.
Add rigatoni, worcestershire, and beef broth and stir everything together. Carefully submerge the noodles and cook over a medium simmer for 20 minutes with the lid on, occasionally removing it and stirring so the noodles don’t stick to the pot.
Once al dente, add the @emmicheeseusa Le Gruyère® AOP and heavy cream and gently stir until creamy. Taste and season with salt and pepper.

Spicy Pineberry Margarita
4 oz Natalie’s Pineberry Limeade
1 small bottle (about 2 oz) @tanteotequila’s habanero tequila
1.5 oz orange liquor (such as grand marnier)

Add ice to a shaker and add all ingredients. Shake vigorously for 30 seconds then strain into a cup over ice.

✨2 cups water
✨1 cup frozen peas
✨1 cup frozen mini meatballs (by Earth’s Best- i get them at @target
✨1/3 cup heavy cream
✨1/3 cup parmesan
✨1 pinch salt
✨1 pinch sugar
⭐️Add butter to a nonstick pan over medium heat and let it melt.
⭐️Add tomato paste and cook down until it darkens - about 2-3 minutes.
⭐️Add pasta, water and a pinch of salt. Cook down for about 10 minutes or until it’s Al dente.
⭐️Add frozen peas and meatballs and once they’re heated through, add heavy cream, Parmesan, and a pinch of sugar. Cook for another minute or two until the sauce is absorbed. serve and enjoy!

✨1/3 cup heavy cream
✨1/3 cup parmesan
✨1 pinch salt
✨1 pinch sugar
⭐️Add butter to a nonstick pan over medium heat and let it melt.
⭐️Add tomato paste and cook down until it darkens - about 2-3 minutes.
⭐️Add pasta, water and a pinch of salt. Cook down for about 10 minutes or until it’s Al dente.
⭐️Add frozen peas and meatballs and once they’re heated through, add heavy cream, Parmesan, and a pinch of sugar. Cook for another minute or two until the sauce is absorbed. serve and enjoy!
😇😇 and if you’re making it for a baby, i recommend overcooking the noodles so it’s easier for them to eat!😇😇
