Here’s a fun St. Patrick’s Day Breakfast idea for the fam! But also, these Green Eggs and Ham Cheesy Egg Bites slap any day of the week! They’re nutritious, delicious, and perfect for the babes and all you meal preppers. I love having them on hand during busy mornings when I don’t even have time to feed myself because they’ve got tons of protein and nutrient rich spinach! Snag the recipe below!

Green Eggs and Ham Cheesy Bites

🟢6 eggs
🟢1 cup low fat cottage cheese
🟢1 6 oz block gruyere, shredded
🟢2 cups fresh spinach
🟢1/4 tsp salt
🟢1/4 tsp garlic powder
🟢5 thin slices rosemary ham, roughly chopped
🟢nonstick spray
🟢boiling water for the water bath

✅Preheat oven to 300F degrees.
✅Add all ingredients (besides the ham!) to a food processor and blend on high for 2 minutes or until the eggs are fluffy and bright green and the spinach is pureed.
⭐️This is the only tricky part - you need to find a baking dish that fits your cupcake tins so that you can rest the cupcake molds on top of the water that will fill the baking dish.
✅Now that you’ve got your baking dish, you’ll want to fill it up a little less than half way with boiling water -WHY? Because you need this steam from the hot water to help the eggbites keep a custardy consistency.
✅If you have a great nonstick cupcake pan, then you can just spray it with nonstick or if you have kids like me, you can spray your nonstick into some cupcake wrappers. My kids like anything that looks like a cup cake so I opt into this method the most!
✅Now evenly divide the green egg mixture among the cupcake tins and then evenly distribute the ham on top. Use a knife to carefully push the ham down so it’s suspended in the eggs.
✅Carefully place the cupcake tin into the boiling water filled baking dish and place in the oven. Bake for 30 minutes or until the eggs are set. Remove from heat and let cool for 15 minutes. Keep refrigerated until you’re ready to enjoy!

Happy National Margarita Day! I’m mixing things up with my friends at @nataliesoj to celebrate the launch of their new Pineberry Limeade! I adore Natalie’s not only because it’s a women owned, family run Florida business but also because they make the best small batch juices in all the land! Their new exotic and flavorful Pineberry Limeade makes the perfect spicy margarita which is why I love using @tanteo_tequila habanero tequila! And because you know I’m all about that snack life, I’m serving it up with my fav strawberry avocado ceviche so let’s make it!

Spicy Pineberry Margarita
4 oz Natalie’s Pineberry Limeade
1 small bottle (about 2 oz) @tanteotequila’s habanero tequila
1.5 oz orange liquor (such as grand marnier)
3 slices serrano chile
1 pinch salt

Add ice to a shaker and add all ingredients. Shake vigorously for 30 seconds then strain into a cup over ice.

Strawberry Avocado Ceviche
½ cup strawberries, finely diced
4 oz fresh mahi, finely diced
¼ red onion, finely diced
2 tbsp fresh cilantro, finely diced
1 tsp serrano chiles, finely diced
1 avocado, diced into cubes
2 limes, juiced
1 tbsp olive oil
1 pinch salt

Add all ingredients to a bowl and let sit for 10 minutes so the lime juice can cure the fish. Serve with chips and enjoy!

Poppy’s Perfect Pasta - recipe below!

✨1 tbsp butter
✨3 tbsp tomato paste
✨1 cup ditalini (or ABC pasta or another tiny pasta)
✨2 cups water
✨1 cup frozen peas
✨1 cup frozen mini meatballs (by Earth’s Best- i get them at
✨1/3 cup heavy cream
✨1/3 cup parmesan
✨1 pinch salt
✨1 pinch sugar

⭐️Add butter to a nonstick pan over medium heat and let it melt.
⭐️Add tomato paste and cook down until it darkens - about 2-3 minutes.
⭐️Add pasta, water and a pinch of salt. Cook down for about 10 minutes or until it’s Al dente.
⭐️Add frozen peas and meatballs and once they’re heated through, add heavy cream, Parmesan, and a pinch of sugar. Cook for another minute or two until the sauce is absorbed. serve and enjoy!

😇😇 and if you’re making it for a baby, i recommend overcooking the noodles so it’s easier for them to eat!😇😇
