🥬3 heads romaine, jullined

Rigatoni alla Vodka + Ground Beef = A super easy and delicious dinner that the whole family will love! My family loves this “beefed’ up version of my classic vodka sauce pasta and I love it because it’s so dang easy to make! I always have a pack of ground beef in my freezer and the rest of the ingredients are pretty much all pantry staples which makes this a great recipe to have on deck for busy nights or when you feel like you have nothing to make!

Beefed Up Pasta alla Vodka
4 servings
10 minutes prep time 30 minutes cook time
1 lb ground beef
2 shallots, finely diced
1/4 tsp red pepper flakes
1 tsp kosher salt, divided
1/3 cup tomato paste
1/4 cup vodka
1 28oz can crushed tomatoes
1/2 cup heavy cream
1/2 tsp sugar
1/2 cup parmigiano, grated
1 lb pasta, cooked al dente
1/2 cup reserved pasta water
2 balls burrata
Prepare pasta al dente according to the directions on the box. Save 1 cup of reserved pasta water for later.
In a large heavy bottomed skillet, add ground beef and cook over medium heat.
Once almost cooked through, add shallots, red pepper flakes and 1/2 tsp salt.
Once the beef is completely cooked through, add tomato paste and stir until evenly distributed. Let this mixture cook until the tomato paste turns a shade darker.
Deglaze the pan with vodka and let the alcohol cook out for a few minutes.
Add in the crushed tomatoes and stir.
Add in the heavy cream, sugar, remaining salt and parmigiano and stir again. Cook this mixture for 3 more minutes or until the sauce turns bright orange.
Once the pasta is ready, add a 1/2 cup of the reserved pasta water and stir it in followed by the cooked pasta. Stir everything up and season with salt and pepper to taste.
Distribute the pasta among four plates and top each one with half a ball of burrata before serving.

My secret to a perfect grilled cheese might disqualify it from being a “real” grilled cheese but I’m willing to bet if you didn’t know how it was prepared, you’d think it was made in a fry pan! Plus, I’m using the air fryer function on the new Wonder Oven from @ourplace and I’m obsessed. It’s so cute and functional?! Plus @chefgreeny’s new @eatnewschool American cheese makes this gloriously iconic sandwich even more dreamy!!!

Here’s the deets:

⭐️ Sourdough and butter - so many people say “but have you tried mayo” and I’m like yes of course i have I’ve been writing about grilled cheese for almost 15 years and all I can say is it works and it’s great but the hot browning butter smell is an essential part of the process and mayo just stinks.

⭐️ Use a really good melting cheese. This new American cheese by @eatnewschool is UNREAL!! Don’t get me wrong, i also love regular American cheese but this one uses real ingredients and isn’t just a “prepared cheese product” which is a game changer. You can also try Muenster, Gouda, havarti, low moisture mozz and fontina for other great melting cheese!

⭐️ When it comes time to cook it, pop it in your air fryer at 370 F degrees and cook for about 10 minutes or so - flipping halfway - until the cheese has melted and the whole exterior is golden brown.

⭐️If your air fryer is a windy one (if you have one, you’ll know what I’m talking about) and you hear the top piece of bread blow off, simply stick a toothpick through the sandwich to keep it together.

Y’all know that I am soooo here for all of the viral cheesy recipes so when I saw these crispy feta fried eggs, I about exploded with excitement! #athenospartner The cheese angels at @athenosfeta make the perfect crumbled feta for this insanely delicious dish that’s taking over the internet. It’s salty, creamy and crisps up like a dang dream! Plus, they’ve been making their feta the same way for the last 20 years so you know they know what’s up! Here’s what you’ll need to make them yourself! #FoodNeedsFeta

Ingredients
½ container (about 3 oz) @Athenosfeta crumbles
1 egg
1 tsp salsa macha (or crispy chili oil)
½ avocado
1 lime wedge
1 tbsp pink pickled onions
1 tsp fresh cilantro
1 tortilla or tostada

Instructions
Heat a fry pan over medium high then add salsa macha (or crispy chili oil) and feta. Let this fry for a minute until the cheese starts to bubble.
Crack egg on top and let the egg cook and get crispy on the bottom.
Once it’s cooked to your liking, remove it from the heat and assemble the taco.
Warm your tortilla, add crushed avocado, a sprinkle of lime juice, the crispy feta fried egg, pickled red onions, cilantro, and enjoy!

🧈5 slices prosciutto, roughly chopped
🧈2 tbsp salty butter

🧈1 medium sweet onion, finely diced
🧈1/4 tsp red pepper flakes
🧈1/4 tsp salt
🧈1 cup frozen peas
🧈1/2 cup reserved pasta water, divided

🧈1/2 cup parmigiano, finely grated
