SLOW COOKER BEEF GOULASH👇🏼

With big, smoky flavours, this gluten feee goulash is a proper winter-warmer for those colder evenings, best made the day before so the flavours can meld together in the fridge overnight! 🤤

INGREDIENTS (Serves 4)

* 2 tbsp plain gluten free flour
* 500g beef skirt
* 1 onion (chopped)
* 1 red pepper (chopped)
* 2 tsp chopped garlic
* 2 tsp smoked paprika
* 1 tsp paprika
* 1/2 tsp cayenne pepper
* 1 x 400g tin chopped tomatos
* 1 Knorr beef stock pot
* 150ml hot water
* Sour cream + fresh chives to serve

INSTRUCTIONS

1. Coat the beef in the gluten free flour then fry in the oil, over a high heat, for 3-4 mins until browned all over.
2. Add to the slow cooker, then fry the onion and peppers in the same pan for another 3-4 minutes. Add to the slow cooker.
3. Add the rest of the ingredients to the slow cooker, stir well, then cook on high for 6 hours or on low for 8-10 hours.
4. For best results, leave in the fridge overnight then reheat the next day and serve with sour cream and chives. I have mine with rice but it also goes well with gluten free pasta. 💛

SLOW COOKER TUSCAN CHICKEN 👇🏼 Such an easy, creamy and delicious dish to tuck into. Just chuck it in the slow cooker, leave it and then tuck in! Gluten free and super easy - follow @gfblogger for more slow cooker inspiration!

INGREDIENTS (Serves 4)

600g chicken breast
3 tsp chopped garlic
1 tsp paprika
1 tbsp oregano
100g sun-dried tomato (roughly chopped)
250ml double cream
150ml chicken stock 1 cube
50g parmesan cheese
120 g spinach leaves (shredded)
Salt and Pepper

INSTRUCTIONS

1. Chop the chicken breast into large chunks (approx 2 inches) and add to the slow cooker.
2. Add all the rest of the ingredients (except the spinach) along with a generous helping of salt and pepper.
3. Mix well, place the lid on and cook on high for 3-4 hours or low for 6-8 hours.
4. Just before serving, remove the lid, add the spinach and stir well. Serve straight away so the spinach doesn’t wilt too much, with rice, mashed potato or even gluten free pasta, and a side of green veg.

INGREDIENTS (Serves 4)

GLUTEN FREE APPLE AND STRAWBERRY CRUMBLE! 👇🏼 Because who says crumble recipes have to be solely for winter!? ☀️ This new recipe is on the blog now but I’ll share it here for all you lovely lot too - the perfect dessert for these moodier summer days!

INGREDIENTS

FOR THE CRUMBLE TOPPING:
* 115g caster sugar
* 115g unsalted butter
* 230g gluten free plain flour
* 50g gluten free oats
* 35g pecan nuts (chopped)

FOR THE FILLING:
* 250g strawberries
* 650g Bramley apples
* 1 tbsp cornflour
* 1 tbsp caster sugar
* Juice of 1 lemon

INSTRUCTIONS

1. Preheat the oven to 180C / 160C Fan / Gas Mark 4. To make the crumble, add the gluten free plain flour and caster sugar to a large mixing bowl and stir to mix. Cut the cold butter into small cubes and add to the mixture.
2. Using your fingertips, run the flour mix into the butter, until you have a breadcrumb-like consistency. Add the oats and stir to mix them through evenly.
3. To make the filling, peel and core the apples and chop into 2cm chunks. Hull the strawberries and cut into halves.
4. Take a large dish (I used a 23cm round dish) and add the fruit to this. Add the caster sugar, cornflour and lemon juice and mix well.
5. Pour the crumble topping evenly over the fruit. Sprinkle over the chopped pecans then bake for 45-50 minutes until the topping is golden and the fruit underneath is bubbling. 💛

SALMON AND BROCCOLI QUICHE 👇🏼 A gluten free quiche is just the best multitasking meal in the summer. It’s lovely hot for dinner and equally as good cold in lunchboxes or for a picnic. Plus any leftovers can also be frozen! Made using my failsafe gluten free pastry recipe. 🫶🏼

INGREDIENTS (Makes 1 x 23cm quiche)

For the pastry:
1 x batch of my Gluten Free Pastry recipe (see previous reel!)

For the filling:
250g broccoli florets
170g tinned salmon (drained)
100ml milk
50ml single cream
3 large eggs

INSTRUCTIONS

1. Make the pastry and chill. Preheat the oven to 180C / Fan 160C / Gas Mark 5.
2. Once the pastry is chilled, roll out to around 4mm thick and press into your quiche dish. Trim the edges and prick the bottom with a fork or knife. Place a sheet of baking paper on top and fill with baking beans.
3. Bake for 10-15 minutes, carefully remove the baking beans and paper then bake for a further 5 mins. Remove from the oven.

FOR THE FILLING
1. To make the filling, cut the broccoli into small florets and steam for 5 minutes. Leave to cool slightly then add to a large jug along with the eggs, cream, milk and salmon, plus a good seasoning of salt and pepper. Mix well.
2. Pour the filling into the baked pastry crust and place back in the oven for 35-40 minutes until the filling has set. Serve hot or cold. 💛

CHICKPEA AND SWEETCORN FRITTERS 👇🏼 These are a super tasty, budget-friendly, gluten free and vegan meal which is ready in less than 15 minute, what’s not to love!? Serve them up warm with salad and houmous or in lunchboxes cold!

INGREDIENTS (Serves 4)

1 x 400g tin chickpeas
2 tbsp water drained from the chickpea tin
150 g tinned sweetcorn
2 spring onions, (chopped)
40 g plain gluten free flour
1 tsp garlic paste
1 handful fresh coriander, ((or parsley)
1 lime, (juice only)
1 tsp chilli flakes
1 tsp cumin
salt and pepper
coconut oil, (for frying)

INSTRUCTIONS

1. Add the chickpeas, spring onions, garlic paste, coriander, lime juice, salt, pepper, cumin and chilli flakes to a food processor and blitz. You want it fairy smooth but a few little chunks just adds to the texture.
2. Turn the mixture out into a large bowl. Add the flour, chickpea water and sweetcorn and use your hands to bring the mixture together. 
3. Once combined, divide into eight portions and shape each one into a fritter, around ½ inch thick. I find it easiest to roll each piece into a ball and then squash it between my hands. 
4. Heat the coconut oil in a large pan and lay the fritters down on one side. Cook on a medium heat for approx 4-5 minutes. Gently flip them over and cook for another 4-5 minutes until they're golden and crisp on each side. Serve hot. 💛
