Gluten-free, paleo, sugar-free

🍗I tore up some spinach I had in the fridge, topped it with some cabbage and gluten-free chicken strips.

🍗For some extra crunch, I took some
@simple_mills Farmhouse Cheddar almond flour crackers and crushed them up.

🍗To finish it off, I added some jalapenos and @primalkitchenfoods sugar free barbecue sauce!

I stay away from dairy 98% of the time even though I can technically fully reintroduce it now, simply because I'm lactose intolerant. For me, it isn't worth my stomach hurting just for some cheese, so I opt to only have dairy on occasion, and tonight was one of those occasions! What's your favorite salad?

🍫Chocolate Mousse Cups🍫

These are vegan, gluten free, grain free, sugar free, and paleo! Not to mention, super thick and creamy

I know, don't kill me. I don't have exact measurements because it all depends on how much you want to make!

🍫pit 3 dates and soak them in boiling water
🍫while the dates are soaking, add
@simple_mills Honey Cinnamon Sweet Thins to a blender (this will be our graham cracker crust, so obviously the more crackers you add, the more crust you will have to work with!) Spoon in some softened coconut oil and blend. The consistency should be similar to wet sand. Adjust as necessary
🍫for the individual cups, I used various small glass containers I had, but you can also use a muffin tin! Press some of the cracker mixture into the bottom of the containers of your choice and a little onto the sides
🍫I didnt rinse my blender, but feel free to do so now
🍫drain your dates and add them to the blender, along with one can of coconut cream (I prefer the Trader Joes brand because it is organic, affordable, and there are no gums or preservatives)
🍫next, I added a small chunk of coconut butter for thickness
🍫add enough cocoa to make it chocolatey but not bitter. For me, this was three tablespoons, but again, adjust to your preference!
🍫add a splash of vanilla extract and blend until comoletely smooth
🍫pour into containers and set in the fridge for 1 hour (overnight is best)
🍫I would eat these within 3-4 days but honestly, i scarfed mine down in like 2 🤣

@teeccino is always the right call. Today I french pressed some Tremella Tulsi, which is one of their mushroom adaptogen blends flavored with cardamom. I played off those flavors by adding a touch more cardamom, some cinnamon, and a heaping spoonful of delicious, creamy, coconut cream!

If you saw my iced maple latte video (a couple back), you know the coconut cream is a little chunky because there are no preservatives and only two ingredients. This is not something that bothers me, but if you're a texture person, I suggest storing your coconut cream in the fridge upside down so you can scrape the fat off the top and use that. It will be much smoother!
