Easy Recipe: Basil and Cherry Tomato Pasta with Fiber Gourmet Light Rotini
Ingredients:
1 cup fresh basil leaves
2 cups cherry tomatoes
2 cloves of garlic
1 tablespoon lemon juice
2 cups Fiber Gourmet Light Rotini pasta
1/4 teaspoon red pepper flakes
A pinch of salt and pepper
1/3 cup olive oil
Instructions:
Cook the Fiber Gourmet Light Rotini pasta according to the package instructions until it's al dente. Drain and set it aside.
While the pasta is cooking, you can prepare the sauce. In a large skillet, heat olive oil over medium heat.
Add the minced garlic cloves to the skillet and sauté until fragrant, being careful not to burn them.
Toss in the cherry tomatoes and cook until they begin to soften and wrinkle slightly.
Add the red pepper flakes and chopped fresh basil to the skillet. Sauté everything together for a few minutes until the basil wilts slightly.
Squeeze the lemon juice over the mixture and stir well. Season with a pinch of salt and pepper to taste.

2 zucchinis
½ red bell pepper
½ yellow bell pepper
1 onion
1 carrot
10 cherry tomatoes
Salt, to taste
Pepper, to taste
Fresh basil leaves
1 cup of grated Parmesan cheese
1 tsp. oregano
1 tsp. fresh thyme
Olive oil
Preparation:
Cook the pasta according to the instructions on the package until al dente. Drain and set aside.
Wash all the vegetables thoroughly, and then cut them into thin strips, about half a centimeter thick.
