This is a wood ear mushroom (Auricularia auricula-judae). These mushrooms can be found in the wild and are cultivated at our farm. They can be dried and rehydrated back to their original jelly texture, just like witches’ butter. They add a chewy, crunchy texture, and rich, jet black color to stir-fries, sautees, and soups. These mushrooms are being harvested this week and will be available at our farmers markets this weekend. #fungi #mushroom #woodear #jellyear #mushroomfarm
