Onsen egg with rice @farahjeats
This is how to make the onsen eggs:
1. Bring 4 cups of water to a rolling boil
2. Turn off heat and immediately add 1 cup of lukewarm water
3. Immediately add 4 eggs (from the fridge) into the pot of water and cover with a lid. Set aside for 17 minutes— longer if you like your eggs less runny
4. After 17 minutes, transfer eggs to an ice bath and set aside for 10-15 minutes before cracking it
This is delicious on its own or in dashi broth. But with rice is how I eat it most often!
