This plant-based glazed lemon loaf is simply the zest (and t-OAT-ally gluten-free) 🍋
Ingredients
LEMON LOAF
1 1/2 cups gluten-free flour
2 tsp baking powder
Pinch of salt
1/2 cup Earth’s Own Butter
1/2 cup @Truvia
1/2 cup Earth’s Own Oat Zero Sugar
3 eggs worth of @JUST Egg
1/2 cup Earth’s Own Sour Cream
1 tsp vanilla extract
2 lemons zested
2 tbsp lemon juice
ZESTY GLAZE
1 cup icing sugar
1 1/2 tbsp lemon juice
1 1/2 tbsp Earth’s Own Oat Zero Sugar
Directions
1. Preheat your oven to 350°F and get a loaf pan ready with parchment paper or by buttering up your pan.
2. In a large bowl, start off by mixing your Earth’s Own Butter and Truvia. Then, add in your JUST Egg, Earth’s Own Sour Cream, Earth’s Own Oat Zero Sugar, lemon zest, lemon juice and vanilla.
3. In another bowl, mix together your flour, baking soda and salt.
4. Place your dry ingredients into the wet mixture and gently mix until just fully combined. It’s important to not over mix!
5. Add your mixture into a loaf pan and place in the oven for 45 mins.
6. Once your loaf is finished, let it cool completely before adding your zesty glaze!
7. When ready, mix your icing sugar, lemon juice and Oat Zero Sugar until silky smooth. Drizzle glaze over your loaf and sprinkle with lemon zest. Add dried edible rose petals for some extra pizazz! ✨ #bakersoftiktok #bake #plantbasedrecipes
