this is my signature Breakfast Hash! Recipe Below 👇

Ingredients: Chipotle Pork Sausage
●      600g Pork Shoulder
●      100g Double Smoked Bacon
●      8g Kosher Salt
●      3ea Peeled Garlic Cloves
●      2g Black Pepper
●      50g  Chipotles in Adobo
●      10g Flat Leaf Parsley
 
Method:
1. Combine all ingredients together and mix
2. Grind the sausage mixture and set aside
3. Brown in a non stick pan
 
 
Ingredients: Pickled Fresno Chili
●      200g White Wine Vinegar
●      20g Sugar
●      2 Garlic Cloves
●      2 Fresno Chilies
●      5g Salt
 
Method:
1. Thinly slice the Fresno chili
2. Bring all remaining ingredients to a boil and add the chili
 
 
Ingredients: 7- Minute Egg
●      4 Eggs
●      Salt
●      Black pepper
Method:
1. Drop the eggs into boiling water for 7 minutes and shock in ice water.
2. Peel and season with salt and black pepper
Ingredients: Potato Crumble
●      2 Yukon Gold Potatoes
●      600g Peanut Oil
●      1g Maldon Salt
 
Method:
1. Run the potatoes through the meat grinder
2. Rinse off the excess starch
3. Add to a pot of oil and slowly fry
4. Blot on a paper towel and season with salt
 
Ingredients: Potatoes
●      4ea Yukon Gold Potatoes
●      1pinch Saffron
●      10g Kosher Salt
●      3g Thyme
●      4 ea Peeled Garlic
●      .25lb Butter
 
Method:
1. Melt the butter and infuse with Saffron and thyme
2. Cook the diced potatoes until tender
3. Brown the potatoes in the pan with the sausage
 To finish:
Season the egg with Maldon salt, black pepper, potato crumble and scallions.
