Ingredients…
1 package of puff pastry, 1 sheet defrosted and rolled out
1lb chicken breast or tenders, cut into 1” cubes
*You may also substitute rotisserie chicken
1x medium onion, small dice (approx 3/4 cup)
2-3 medium celery stalks , small dice ( approx 1/2 cup)
2-3 medium carrots, peeled, small dice (approx 1/2 cup)
1-2 sprigs thyme
4 Tb olive oil
1-1 1/4 cup chicken stock
2 Tb butter, cut in half
2 Tb flour
1/3 C heavy cream
Salt and pepper to taste
Egg wash (1 egg/ 1 Tb water ) whisked lightly with a fork

Directions…
Preheat oven to 400 degrees
If using raw chicken, cut into 1 “pieces and season with splash of oil, and salt and pepper. Heat a pan on medium- high heat and add 1-2 Tbsp oil. Saute chicken until lightly browned all over, 3-4 minutes, but not fully cooked, take out of pan and set aside.

In the same pan, and on medium heat, add 2 more Tb of oil and saute onions, carrots, and celery until caramelized, adding a pinch of salt. Add the butter and flour and cook for 2 minutes. Add the chicken back in and the thyme, cook another minute. Add the chicken stock and bring to a boil. Lower heat and add cream. Stir until thoroughly combined and season with salt and pepper. Remove from heat.

Place puff pastry on top of skillet and use scissors to trim and shape. Tuck in dough or pinch to rim of pan. Make 2-4 vent slits in center with a sharp paring knife then brush with egg wash. Cook in oven until dough is golden brown, about 25-35 min (so crust is fully cooked underneath). Let sit for 5-10 before serving to set up.

Blueberry Filling
Ingredients:
5 1/2 C fresh blueberries
2/3 C sugar
Zest and juice of one medium lemon
1/4 C flour
2 T cornstarch
1 egg (for egg wash, mix w 1 T water and whisk)

Directions:
Add all ingredients together and mix very well, crushing some blueberries while mixing to aid in distribution of dry ingredients. Set aside filling and prep your crust.

Pie Dough (makes 2 crusts- top and bottom)
Ingredients:
2 C flour + more for dusting and rolling out
2 sticks unsalted butter, very cold and cut into small squares
1 tsp sugar
1/2 tsp kosher salt
1/4 Ice water

Directions;
In a food processor, place cold cut butter, flour, salt and sugar. Pulse until mixed and dough looks like the size of small peas. Turn the processor on and slowly pour in the ice water. As soon as the dough starts coming together, turn it off. On a floured board, place dough and briefly knead together. Divide the dough in half and shape each piece into a round puck. Wrap each with plastic wrap or parchment and chill at least 20 minutes before rolling out.

On a floured board, roll out one piece of the dough for the bottom crust. Using your rolling pin, roll up dough and center it on top of your pie pan. Gently pat dough into pan. Poke holes all over with a fork. Place in fridge.

Roll out the top crust the same way. Using a pizza cutter and ruler, cut the dough into 10 equal pieces. Take the bottom pie dough from the fridge. Mix filling with a spoon, then pour into crust. Weave the lattice over and under with 5 pieces going vertical and 5 horizontal. Secure each piece at the edge of the crust with the overhang from the bottom crust.
Brush with egg wash and sprinkle with sugar.

Cook pie for 20 minutes at 425 degrees then lower to 375 degrees and cook another 50 min. Cover crusts with foil or pie crust cover so it doesn't burn. Let cool at least 2 hours before serving . Top with creme fraiche, whip cream, or ice cream.
