Chef John Martinez has a deep family connection to some of the 100+ Chinese grocery stores that once populated south Tucson where his own Mexican family lived. He honored the Chinese Chorizo by featuring it in a dish that was served how his friend David Tang used to eat it when Tang was growing up in his family grocery store: with fluffy scrambled eggs topped with mushroom Chinese Chorizo and a fried rice featuring our pork Chinese chorizo and sweet Chinese sausage. It felt very comforting and pays such a beautiful homage to the story of the Chinese Chorizo.
