I tell people what I have done in my life and am often met with inquisitive glances. This is a 65,000 acre preserve located somewhere south of Texas and north of Ecuador. It is home to 5 types of wild cats that are hunted by poachers. When a poacher is caught all we can do is take their guns and destroy whatever implements they are using to track the cats. This is an incredible cloud forest and the night time sky is unparalleled

Liquid nitrogen can be used for many other purposes in the kitchen besides ice cream. People will often toast their chilies and mill them into powder using a coffee grinder. I have used that method and still do on occasion. However, processing them with liquid nitrogen yields a smoother sauce. I typically employ this method when making my Vindaloo, Doro Wat, Berbere curries, and my Mole´. In sausage making, it will help with the overall texture and absorb and stabilize some fats. I have used this method in making Spanish chorizo, pepperoni, and South African Droëwors.
