Easy Yellow Mug Cake

Ingredients ✨

2 tablespoons unsalted butter
1 large egg yolk
2 tablespoons milk
½ teaspoon vanilla extract
¼ cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1 pinch kosher salt

Instructions ✨

Add the butter to the mug and microwave for 20 to 40 seconds or until melted.

Add the egg yolk, milk, and vanilla extract, mixing the wet ingredients thoroughly with a fork to combine.

Stir in the flour a little bit at a time, then mix in the remaining dry ingredients: sugar, baking powder, and salt.

Microwave for about 70 seconds (1 minute, 10 seconds).* This will take more or less time depending on your microwave's wattage (anywhere from 60 to 90 seconds). If the cake is not fully cooked, microwave in 10-second increments. It is normal for the cake to rise above the rim of the mug as it cooks and then sink slightly. Do not open the microwave too soon or the cake will sink significantly.

Allow the cake to cool to room temperature before topping it with frosting, powdered sugar, or whipped topping (optional).

2 cups Bisquick mix
1 cup milk
1 large egg
½ teaspoon ground black pepper divided
2 pounds ground beef
1 large sweet onion sliced
1 large green bell pepper sliced
0.87 ounce brown gravy mix
1 cup water
11 slices provolone cheese

Instructions

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with cooking spray and set aside.

In a mixing bowl, combine the Bisquick, milk, egg, and half of the black pepper until smooth. Pour the Bisquick mixture into the prepared baking dish.

In a large skillet over medium-high heat, brown the ground beef, about 5-7 minutes.

Add the onion slices and green bell pepper slices to the skillet with the beef and cook until softened, about 5-7 minutes. Drain any excess grease.

Stir the brown gravy mix, water, and the remaining black pepper into the ground beef mixture. Simmer for about 3-5 minutes until the liquid is reduced.

Spread the beef mixture over the Bisquick. Top with the cheese slices, spacing evenly and tearing the slices as needed for full coverage.

Bake the casserole in the preheated oven for 25-30 minutes, or until the layer of provolone cheese is golden brown and a toothpick inserted in the biscuit layer comes out clean. If the cheese becomes too brown before the biscuit layer is done cooking, cover the top of the casserole in aluminum foil.

Allow the casserole to cool for about 10 minutes before slicing and serving.

Ingredients

8 ounces cream cheese softened
½ cup sour cream
½ cup mayo
1 cup shredded mozzarella
⅓ cup shredded parmesan cheese
1 cup pizza sauce
3 ounces pepperoni about 45 slices

Instructions

Preheat the oven to 350ºF (180ºC).

In a mixing bowl, combine the cream cheese, sour cream, mayo, half of the mozzarella, half of the parmesan, and a quarter of the pizza sauce until smooth.

Cut the pepperoni into quarters or chop it into small pieces, reserving about a dozen whole pepperoni for the top of the dip. Stir the pepperoni pieces into the cream cheese mixture.

Spread the cream cheese mixture into the bottom of a 9-inch pie plate.

Layer with the remaining pizza sauce and the remaining mozzarella and parmesan. Top with the reserved pepperoni.

Baked for 20 minutes or until the cheese bubbles along the edges.

Make cake mix blueberry muffins with white cake mix or yellow cake mix, fresh blueberries (or frozen), and a lemon powdered sugar glaze, a perfect sweet treat.

Ingredients

Muffins
1 box white cake mix 15.25 ounces
1 tablespoon lemon zest
2 large eggs
½ cup milk
⅓ cup vegetable oil
1-½ cup blueberries
2 tablespoons turbinado sugar optional

Lemon Glaze
1 cup powdered sugar
2 tablespoons lemon juice
1 tablespoon milk

Instructions

For the muffins
Preheat the oven to 350ºF (177ºC). Line two muffin pans with 15 baking cups.

Whisk the dry cake mix and lemon zest in a large mixing bowl until the zest is evenly distributed.

Add the eggs, milk, and oil to the large bowl. Beat with a hand mixer on medium speed until just combined.

With a silicone spatula, gently fold in the blueberries.

Evenly distribute the batter across the baking cups, leaving a small space at the top. Top evenly with turbinado sugar (optional).

Bake for 18 to 22 minutes or until golden brown on top. A toothpick inserted into the center should have a few moist crumbs but no runny batter.

Let muffins cool for a few minutes in the muffin tin, then transfer them to a wire cooling rack.

For the glaze
While the muffins cool, make the lemon glaze in a small bowl by mixing the powdered sugar and lemon juice together until combined. Adjust the thickness of the glaze by adding the milk little by little. You may choose to skip the milk for a thick glaze or use all of it for a thin drizzle.

When the muffins are completely cool, top with the lemon glaze.

6 tablespoons unsalted butter melted

Instructions

1. Preheat the oven to 350ºF (180ºC). Lightly grease an 8x8-inch baking dish or line it with parchment paper and set aside.

2. In a large mixing bowl, cream the softened butter and sugar with a hand mixer until the mixture is pale and fluffy. Add the mashed banana, egg, sour cream, and vanilla extract and mix on medium speed until combined. Set aside.

3. In a medium mixing bowl, whisk the flour, baking powder, baking soda, cinnamon, and salt until combined. Add dry ingredients to the wet mixture and mix on low speed just until combined.

4. Pour the cake batter into the prepared baking dish and spread it into an even layer. Set aside.

5. In a small mixing bowl, stir the dry crumble topping ingredients together, then add the melted butter. With a fork, gently fold the butter into the dry ingredients. It will become crumbly with small and large crumbs. Top the cake batter with the crumb topping mixture.

6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs (but no liquid batter). If the cake browns too quickly, place foil over the top and continue baking. Allow to cool for at least 10 minutes before serving.

Instant Pot chicken and stuffing is the ultimate comfort food. It's the best of Thanksgiving all together in one pot. Recipe below. 👇

Ingredients
1 tablespoon unsalted butter
2 pounds boneless skinless chicken breasts, diced
1 teaspoons poultry seasoning
½ teaspoon salt
½ teaspoon ground black pepper
10.5 oz cream of chicken soup
1 cup chicken broth, divided
1 cup sour cream
6 oz Stove Top Stuffing Mix

Instructions

Set the Instant Pot to Sauté (normal). When hot, melt the butter.

Season the diced chicken evenly with poultry seasoning, salt, and black pepper, and then add it to the pot. Brown the chicken on all sides but do not fully cook through.

Cancel the sauté function and add a splash of the chicken broth to deglaze the pot (see recipe notes on my site for more details).

In a medium mixing bowl, combine the cream of chicken soup, chicken broth, and sour cream. Pour the soup mixture evenly over the diced chicken.

Sprinkle the dry Stove Top stuffing over the chicken. Do not stir.

Close the lid and set the valve to Sealing. Pressure cook on HIGH pressure for 5 minutes. It will take the pot about 5 to 10 minutes to come to pressure before the cook time begins.

When the cooking time is complete, do a Quick Release by turning the steam release to the Venting position (see safety notes below). When the float valve is down, you can open the lid. Serve warm.
