BLUEBERRY CRUMBLE BARS RECIPE

🫐 CRUST
1 1/2 cups (191g) AP flour, sifted
1/4 cup plus 2 Tbsp (42g) powdered sugar, sifted (plus extra for top)
1 tsp baking powder
1/4 tsp fine sea salt
3/4 cup (170g) unsalted butter, softened

Line an 8” x 8” baking pan with parchment paper, overlapping the ends a couple of inches.
In a medium bowl, whisk together flour, powdered sugar, baking powder and salt.
In a large bowl, beat butter until smooth. Add flour mixture just until combined.
Press dough into prepared baking pan.
Bake until surface looks golden brown, about 20-25 minutes.
Meanwhile, prepare topping and filling.

🫐 TOPPING
1 cup (128g) AP flour
1/3 cup (66g) packed brown sugar
3 Tbsp sugar
1/4 tsp cinnamon
1/4 tsp fine sea salt
6 Tbsp (85g) cold unsalted butter, cubed

In a medium bowl, combine flour, brown sugar, sugar, cinnamon and salt. Work cold butter into flour mixture with a pastry blender or with your fingers until the mixture looks like wet sand. Press together to make 1/2” chunks.

🫐 FILLING
3 1/2 cups (454-510g) blueberries
1 tsp lemon juice
2/3 cup (132g) sugar
2 tsp cornstarch

In a large bowl, toss blueberries with lemon juice. Mix in sugar and cornstarch. Pour blueberry mixture over warm crust. Top evenly with crumble mixture.
Return to oven and bake until topping is golden brown and filling starts to bubble, about 28-33 minutes. Let cool. Sprinkle with powdered sugar.

Let’s make this easy spring dessert from my childhood. It’s buttery, moist and rich. It’s also kind of addicting, because everyone always asks for seconds.

PINEAPPLE COCONUT CAKE RECIPE
1 cup plus 2 Tbsp (5 oz) AP flour, sifted
1 1/2 tsp baking powder
1/4 tsp fine sea salt
1/4 cup (2 oz) unsalted butter, melted
1 cup (7 oz) sugar
1 large egg
1 large egg yolk
1/2 tsp pure vanilla extract
1 8-oz can crushed pineapple in juice, undrained

Preheat oven to 350°F. Grease an 8” x 8” baking pan.
In a medium bowl, whisk together flour, baking powder and salt.
In a large bowl, whisk melted butter, sugar, egg, egg yolk and vanilla until smooth.
Stir in pineapple. Stir in flour mixture just until combined.
Transfer batter to prepared baking pan. Bake until top is golden brown and toothpick inserted into center comes out clean, about 20-25 minutes.

TOPPING
1/4 cup (2 oz) unsalted butter
1/4 cup (1 3/4 oz) sugar
1/4 cup (1 3/4 oz) packed brown sugar
1/3 cup (2 5/8 oz) heavy cream
1/8 tsp fine sea salt
1 cup (2 5/8 oz) sweetened coconut flakes
1/2 cup (2 oz) chopped toasted pecans
1/2 tsp pure vanilla extract

In a medium saucepan, melt butter with sugar, brown sugar and salt. Whisk in heavy cream. When mixture starts to bubble, turn heat down to low and simmer until thickened, about 3 minutes. Remove from heat and stir in coconut, pecans and vanilla. Spread over warm cake. Let cool at least 15 minutes before cutting.
