It shouldn’t if you’re using an oil with a high smoke point (like grape seed oil) and medium-high heat ☺️

Pick a better steak… this is the end of the sirloin where the nerve is. This is for mw or w temped cooked. Or, remove the nerve and use for steak tip

looks good, I do the same but then use the fond to make a delicious steak sauce with shallots, more butter, mushrooms and cream.

And don't buy an end cut like she did and also make sure it has plenty or marbling, less marble the more rough and dry it will be

Yep! For this steak I basted for about a min on each side on lower heat. Basically aiming for internal temp of about 130-135
