The first day of fall calls for a yummy banana bread recipe! ๐ ๐
RECIPE: 1/3 cup extra-virgin olive oil
1/2 cup honey or maple syrup
2 eggs ( or use apple sauce if you want to make it vegan)
1 cup mashed ripe bananas
1/4 cup milk of choice or water
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp cinnamon
2 1/2 cups oat flour
1/2 cup mix-ins like chopped walnuts, pecans, chocolate chips, raisins, dried fruit, etc.
1. Preheat oven to 325 degrees & grease a 9x5-inch loaf pan.
2. In a large bowl. beat the oil & honey together with a whisk. Add the eggs & beat well, then whisk in the mashed bananas & milk.
3. Add the baking soda, vanilla salt, and cinnamon, and whisk to blend. Lastly, switch to a big spoon & stir in the flour, just until combined. Add any add-ins now!
4. Pour the batter into the loaf pan & bake for 55 to 60 min!
