Microgreens are versatile and can be added to salads, sandwiches, smoothies, or used as a garnish. Incorporating microgreens into your diet is a simple and delicious way to enhance your overall well-being. Here's a quick and simple microgreen salad recipe that you can enjoy in no time (I kept mine simple and only added avocado and drizzled my own homemade dressing, recipe below):
Ingredients:
- Handful of micro greens (a mix of your favorites) I used Broccoli, Red Cabbage and Rutabaga
- Cucumbers, cherry tomatoes, shredded carrots (or any other preferred veggies)
- Avocado (sliced)
- Your favorite Dressing
Instructions:
1. In a bowl, mix together a handful of micro greens.
2. Top the micro greens with your favorite veggies, such as cucumbers, cherry tomatoes, and shredded carrots.
3. I kept is simple and topped with sliced avocado on top.
4. Drizzle the salad with your Favorite Dressing
(homemade dressing recipe below).
5. Mix everything together and enjoy!
Homemade Dressing Recipe:
- 3 tbsp. Olive Oil
- 1/2 tsp. Oregano
- 1/2 tsp. Sage
- Salt (to taste)
- 1/4 tsp. Pepper
- Juice of 1/2 lemon or lime (freshly squeezed)
