Brownie Bird Nest 🪺 There’s no doubt about it: Easter treats are one of the most enjoyable parts of the springtime celebration. These adorable brownies are the perfect addition to your holiday table.

INGREDIENTS
1/2 cup Arrowhead Mills All-purpose flour
1/8 tsp Baking soda
3/4 cup Chocolate chips, semisweet
3/4 cup Cocoa powder, unsweetened
1 tbsp cornstarch
1 1/4 cups granulated sugar
1/4 tsp salt
1 tsp vanilla extract
1/3 cup vegetable oil
5 tbsp butter, unsalted

Flaxseed Egg
2 tbsp Arrowhead Mills Flaxseed ground
5 tbsp water

DIRECTIONS
Preheat the oven to 325°F.
In a small bowl make the flaxseed egg, and allow it to set for 5 mins.
In a microwave safe bowl, add the butter. Microwave for about 1 minute, or until the butter is melted. Whisk in the sugar, flaxseed eggs, and vanilla. Stir in the oil and cocoa powder.
With a rubber spatula, stir in the flour, baking soda, cornstarch, and salt until combined. Stir in the chocolate chips.
Line a muffin tin with butter.
Scoop the batter into cupcake liners until they are each about 1/2 way full
Bake for about 25 minutes or until a toothpick inserted into the middle comes out clean
Press the center down with tbsp measuring spoon.
Allow to cool and remove from tin.
Add in egg shaped candies on top of the brownies and enjoy!

Looking for your newest late-night treat? We’ve got you covered with these Healthy Vegan Twix bars that are not only super easy to make but they’re a much healthier and VEGAN version of the beloved candy bar!

Recipe:

1/4 cup + 2 tbsp Arrowhead Mills coconut flour
1 1/2 cup almond flour
3 tbsp vegan butter (or coconut oil)
2/3 cup real peanut butter
1/4 cup pure maple syrup
1 tsp vanilla bean paste
1/4 tsp salt
1 cup good quality vegan dark chocolate, chopped

To start, preheat your oven to 350F.

To prepare your base, combine the coconut and almond flours, 1/8 tsp of salt and your butter. Mixture should stick together when squeezed and resemble wet sand.

Press into the bottom of a lined pan of choice, depending on how thick you want them. A standard loaf pan was used in this recipe for a slightly thicker bottom crust layer.

Bake your bottom layer for 10-12 minutes and let cool for several minutes while you make the “caramel” layer.

In a small pot, combine your peanut butter, 1/4 cup of maple syrup, vanilla paste and remaining salt. Bring to a low boil then pour over the crust layer.

Let the two layers chill for 20 minutes in the freezer.

Once chilled and caramel layer is set, pour over your melted dark chocolate and freeze until set.

Cut into slices and leave in an air-tight container at room temperature for up to 5 days.

1 large egg
1/2 cup/100g sugar
1 large cara cara orange, zest and juice
1 cup/120g Arrowhead Mills organic rye flour
1 tbsp vanilla bean paste
1/4 cup/50g melted butter
1/4 cup/45g plain greek yogurt
1/4 cup/60ml whole milk
2 tbsp heavy cream
1/4 tsp salt
1 tsp baking powder

glaze:

1 cup sifted powdered sugar
2 tbsp cara cara orange juice
1 tbsp strawberry syrup (optional but delicious)
Zest or freeze dried strawberries for topping

In a large bowl, add your sugar and zest.

Rub your zest and sugar together then add your juice and whisk.

Add in your other wet ingredients and whisk.

Fold in your dry ingredients until just combined. Do not over mix!

Grease your bundt pan and add your batter.

Bake in a 350F oven for 12-15 minutes or until a tooth pick comes out clean.

Let the cakes cool completely before adding your glaze, top with extra cara cara orange zest or crushed freeze dried strawberries and enjoy these bright and scrumptious mini bundts!

INGREDIENTS:

2 cups Arrowhead Mills Red Lentils rinsed
1 medium yellow onion chopped
4 large cloves garlic minced
3 tbsp olive oil
1 can full fat coconut milk
5 cups vegetable broth
4 large carrots diced
2 tbsp tomato paste
1 tsp curry powder
1 tsp turmeric
1 tsp cumin
1/2 tsp ginger
1 tsp paprika
Salt and pepper to taste

DIRECTIONS

In a large pan with the olive oil add in onion, carrots, garlic, and seasoning.
Sauté for an additional 6-8 minutes until the onion is translucent.
Add in the red lentils, tomato paste, coconut milk and vegetable broth.
Bring to a boil, reduce the heat to low, covered, for about 25 minutes or until the lentils are cooked through and most of the liquid is absorbed.
Transfer to a blender (or use an immersion blender in the pan) and process until completely smooth.
Transfer back to the pot. Taste to add in salt and pepper. Simmer on low for 5 mins before serving.
