Easy and delicious sheet pan bread.🤩

Recipe from

400 ml boiling water
400 ml milk
140 g oats
50 g fresh yeast
2 tbsp honey
50 g butter (room temperature)
30 g flaxseeds
240 g Rye flour
480 - 540 g All-purpose flour
2 tsp salt

Follow these steps:
1. Add the oats in the stainless steel bowl, add the hot water and stir.
2. Add the cold milk and let the batter cool to 37 degrees.
3. Crumble the yeast into the bowl, start the machine on low speed until the yeast dissolves.
4. Add honey, butter, flax seeds, rye flour, all-purpose flour and salt. Work the dough in the machine for 10 minutes on medium speed. You should be able to touch the dough without sticking to the fingers. Add more all-purpose flour if necessary.
5. Place the bowl cover on the bowl and let it ferment for 30 minutes.
6. Grease a sheet pan of approx. 30×40 cm with butter.
7. Pour the dough onto a lightly floured bench.
8. Roll out the dough evenly and distribute it in the pan. Cut squares, dust with all-purpose flour and poke with a fork. Cover with kitchen towel and leave to rise for 30 minutes.
9. Set the oven for 200 degrees.
10. Bake in the middle of the oven for 20-25 minutes until the bread has a nice color and feels light. Leave to cool completely on a wire rack under a kitchen towel.
11. The bread is excellent for freezing.
