these cinnamon roll pancakes are insanity.
the way the cinnamon sugar swirl caramelizes on top makes it feel like you’re actually biting into a cinnamon roll & the icing is the perfect touch
you can use whatever pancake recipe you want. i like to use @kodiakcakes protein pancake boxed mix
to make the cinnamon sugar mixture, mix together 2 tbsp melted butter, 2 tbsp brown sugar, and 1 tsp cinnamon in a small bowl until everything is well combined. add to a plastic bag or piping bag then cut the corner/tip just enough so you can pipe a thin line
add your pancake batter to a greased pan/griddle then pipe a cinnamon sugar swirl onto each pancake, starting in the middle. cook the pancakes as you normally would! be careful when flipping so you don’t distort the swirl
this will make enough cinnamon sugar mixture for 2 servings of 3 pancakes
to make the icing, i just mixed together a little powdered sugar with milk until it was a drizzlable consistency

Made with my forever favorite @bobsredmill old fashioned rolled oats. When I bake with Bob’s Red Mill products, I always know I'm fueling myself with high quality ingredients. So many of their products are also easy to find at my local grocery store or on Amazon.

Preheat the oven to 350 degrees F. Blend together 1/2 a banana, 1 whole egg, 1/2 cup @bobsredmill old fashioned rolled oats, 1/4 cup milk of choice, 1/2 tsp vanilla extract, 1/4 tsp baking powder, 1 tbsp sweetener of choice (I used brown sugar to give the chocolate chip cookie flavor), and a pinch of salt. Add to an oven safe dish, mix in 1/2 tbsp mini chocolate chips, top with another 1/2 tbsp mini chocolate chips, then bake for 25-30 minutes. Top with a splash of warm milk and devour 🤤

crispy salmon bites 🥹❤️🔥💥 these are INSANELY good. perfectly cooked, crispy on the outside, and covered in a sweet & spicy glaze. i could happily eat these every day for the rest of my life
to make 2 servings, cut up 1 lb of salmon (2 regular sized salmon filets) into 1 inch cubes. toss with 1 tbsp soy sauce and 1 tbsp extra virgin olive oil. in a shallow bowl, mix together 2/3 cup plain panko breadcrumbs, 1/4 tsp garlic powder, 1/4 tsp paprika, and salt/pepper to taste. roll each bite in the breadcrumb mixture until fully covered. add the breaded bites in a single layer to a lined air fryer basket. air fry for 10 mins at 375 degrees F. when the bites are done cooking, toss them with 1-2 tbsp honey and 1-2 tbsp sriracha (or hot sauce of choice)
final bowl details: cooked white rice, roasted cauliflower florets (seasoned with olive oil/salt/pepper and roasted at 400 degrees F for 20 mins), chopped cucumber, edamame, chopped green onion, and spicy mayo
to make the spicy mayo, mix together 1/3 cup mayo, 1/2 tsp garlic powder, the juice of 1/2 a lemon, and salt/pepper to taste.

sauté 1 packed cup of spinach on low medium heat in just a tiny bit of avocado or olive oil. this will take around 30 seconds! remove the spinach from the pan as soon as it begins to wilt and set aside. make sure you use a very small amount of oil so that the wrap doesn’t get soggy
whisk together 3 egg whites. add in a sprinkle of italian seasoning, garlic powder, salt, and pepper. lightly grease the same pan you used for the spinach (still on low medium heat) and add your egg mixture. top with an even layer of the spinach, 1/4 cup diced sun dried tomatoes, and 1/4 cup crumbled feta.
once the egg white has set, transfer to your favorite wrap! i’d recommend using one that’s at least 8-10 inches wide. i fold my egg white mixture in half before transferring to my wrap so that it’s less messy.
roll up your wrap, optionally crisp each side in your pan & enjoy!
*i buy my sun dried tomatoes in oil then blot off the excess oil with a paper towel so that the wrap doesn’t get soggy

1 oz triple sec
1.5 oz silver tequila
2 tsp cream of coconut
1 tsp homemade blackberry syrup
shake all ingredients over ice in a cocktail shaker.
pour over ice & garnish with sugared blackberries 🖤
*if you want a plain coconut marg just leave out the syrup and add an extra tsp of cream of coconut
*you can sub the cream of coconut for full fat coconut milk if you want a cocktail that’s a bit less sweet, but you’re going to lose some of the coconut flavor!
to make the toasted coconut rim, toast a handful of coconut flakes until golden brown. roll your glasses once in agave syrup and one in the toasted coconut flakes
to make the blackberry syrup, combine 6 oz (1 small container) fresh blackberries, 3/4 cup granulated sugar, and 3/4 cup water in a small saucepan on medium high heat. bring everything to a simmer then mash the blackberries with a fruit masher or fork. reduce heat to low medium & simmer for 6-7 additional minutes. stir in a squeeze of fresh lemon juice then strain out the berries & seeds with a fine mesh strainer. refrigerate in a lidded plastic jar for up to a week!
