đ¤ Shrimp Cookery Ingredients:
- 1 lb 21/25 Shrimp, Peeled & Deveined
- 3 qts Water
- 0.25 cup Kosher Salt
đŞ Procedure:
1. Bring salt and water to a boil
2. Add shrimp and cook for 45 seconds
3. Transfer shrimp to a salted ice bath for rapid cooling
4. Drain and gently dry shrimp in a paper towel-lined container
đśď¸Aguachile Base Ingredients:
- 1 cup Water
- 0.75 cup Lime Juice, Fresh Squeezed
- 0.25 cup Orange Juice, Fresh Squeezed
- 3 oz Cucumber, Diced
- 0.3 oz Cilantro Stem
- 0.2 oz Jalapeno
- 0.5 tsp Habanero, Minced
- 1 oz Tomatillo
- 1.5 tsp Kosher Salt
- 0.5 tsp Sugar
- 2 Tbls Olive Oil
đŞ Procedure:
1. Blend all ingredients except olive oil until smooth
2. Slowly add olive oil while blending
3. Strain through a fine strainer
4. Store on ice or in the fridge until ready to use
đ Shrimp Aguachile Ingredients:
- 8 21/25 AB Shrimp, Blanched & Halved
- 4 Cape Goose Berries, Cut in Half
- 0.25 oz Red Onion, Julienne
- 2 Tbls Cilantro, Chiffonade
- 1 Tbls Cucumber, Medium Diced
- 8 Radish Slices
- 1 tsp Olive Oil
- 2g Maldon Sea Salt
- Freshly Cracked Black Pepper
- 6 Tbls Agua Chili Base
đŞ Procedure:
1. Toss shrimp, cape goose berries, red onion, cilantro, and radish slices with olive oil and kosher salt
2. Arrange on a plate
3. Add the Agua Chili Base
4. Finish with olive oil, Maldon Sea Salt, and cracked black pepper
