I came across this recipe for jallab in one of my favorite news cookbooks called, A Middle Eastern Pantry by Lior Lev Sercarz. Very similar to a Turkish şerbet, this drink is meant to refresh and provide energy during the heat of summer. It is usually made from a mix of molasses and rose water (or orange blossom water), then topped off with pine nuts, almonds, pistachio or golden raisins. In effort to keep raising awareness aboit the devastation caused by the earthquakes in Turkey and Syria, im continuing to cook dishes from the region. Here I am preparing içli köfte (kibbeh) which a special meatball popular throughout the Middle East, including Turkey and Syria.
